One of the standout recipes from our Salads Make the Meal class on May 18th was this incredible Stetson Chopped Salad! π₯β¨
This crowd favorite is the famous Stetson Chopped Salad, inspired by one of Old Town Scottsdale's longtime restaurant classics. Packed with arugula, smoked salmon, toasted pepitas, cranberries, queso fresco, and a creamy pesto dressing, it's the perfect balance of fresh, flavorful, and satisfying.
With warm weather officially here, it's an ideal meal for patio lunches, poolside dinners, and easy entertaining all summer long. βοΈπ·
We've included the recipe below so you can recreate this Sweet Basil favorite at home. If you make it, we'd love to hear what you think!
STETSON CHOPPED SALAD
Dressing:
4 TBSP basil pesto
Β½ cup mayonnaise
Β½ cup buttermilk
2 TBSP lemon juice
Β½ shallot, chopped
Salt and freshly ground pepper taste
Salad:
8 cups arugula
1 cup cooked Israeli couscous
4 oz smoked salmon, chopped
1 cup toasted salted pumpkin seeds (pepitas)
1 cup dried sweet corn (use regular corn kernels if dried corn is unavailable)
1 cup dried cranberries, soaked in Grand Marnier for 1 hour
1 cup tomatoes, chopped
1 cup queso fresco
1. Make the dressing: In a blender or mini food processor, combine the pesto, mayonnaise, buttermilk, lemon juice, shallot, and salt and pepper. Blend until smooth. Refrigerate until ready to use.
2. Spread arugula leaves evenly on a large, flat platter. Cover with layered rows of couscous, salmon, pepitas, sweet corn, dried cranberries, tomatoes and queso fresco.
3. Spoon a little dressing over the salad and serve the remainder on the side.
