๐ World Environment Day (today!) feels like a good moment to talk about the bigger picture behind Figure Ate. ๐
Our parent nonprofit, , works to advance regenerative agriculture through land stewardship, farmer training, and research at Jalama Canyon Ranch โ a 1,000-acre living laboratory on Californiaโs Central Coast.
Agriculture can be part of the climate solution.
When land is managed regeneratively, healthy soil can store more carbon, support biodiversity, improve water cycles, and grow more resilient ecosystems over time. Season after season, itโs about working in better relationship with the land.
Figure Ate was created to help support that work through food people actually want to eat: air-dried beef biltong ๐ฅฉ made with regeneratively sourced beef, and naturally fermented persimmon vinegar ๐ crafted from surplus California fruit.

A few snaps from a delicious, musical evening at the ranch!
On Saturday, our parent nonprofit hosted 75 people for โMusic of the Living Landscape.โ Composer Nathan Sherwood Liang .music performed music across three locations incorporating field recordings of sounds from the ranch.
provided the food at each stop. poured wine made with grapes from our vineyards. First course was brioche crostini with pickled JCR chanterelles, Chavez Farm tomatoes and our Persimmon Vinegar, followed by lamb bites, and steak tartines.
It was a magical, one-of-a-kind evening, thank you to everyone who attended!
