Check out this quick and healthy Ceviche de Queso Panela recipe prepared by our PSJA Pathways Toward Independence/LIFE Program students in collaboration with our PSJA Child Nutrition & Wellness Team

Want to make this at home? Here’s the recipe:

* Queso Panela
* Fresh Cilantro
* Fresh Jalapeños
* Tomatillos
* Red Onion
* English Cucumber
* Extra Virgin Olive Oil
* Freshly Squeezed Lemon Juice
* Black Pepper
* Salt
* Baked Tostadas

Preparation:
1. Dice panels cheese and veggies into small cubes.
2. Combine cheese and veggies in a mixing bowl
3. To make the dressing, pour 1/4 cup extra virgin olive oil, 3/4 cup lemon juice, salt, and pepper in a container with lid and shake vigorously.
4. Pour dressing over cheese and veggies, mix again.
5. Prepare over a baked tostada.
6. Ready to serve and enjoy!

Want to make this at home? Here’s the recipe:

1/2 cup - 1% milk
1/4 cup - Vanilla low fat yogurt
1 cup - Spinach
1/2 cup - Diced pineapples
1 tbsp. - Honey
1/4 tsp. - Vanilla extract
1 cup - Ice

Instructions

1. Peel & dice the Pineapple.
2. Wash spinach.
3. In a blender, pour the milk, yogurt, pineapple, honey, and vanilla.
4. Add ice and finish blending. Garnish with pineapple cube.
5. Serve and enjoy!

I would like to thank everyone for joining us at our our annual Farm to School Market 2022. We hope everyone was able to take fruits/vegetables home and learned about the amazing initiative we have at PSJA Child Nutrition.

We had wonderful performances by Stephen F. Austin Middle School Orchestra, PSJA T. Jefferson T-Stem ECHS Folkloric & Conjunto. The produce was donated by our amazing Food Bank RGV INC.

Thank you for coming and I hope to see you all for next years Farm to School Market!

PSJA Child Nutrition held its Annual Child Nutrition Mini Food Expo on November 9th at PSJA Collegiate School of Health Professions.

Students from the high schools had the opportunity to provide feedback on menu items. The students were able to taste-test different food items and vote on their favorite dishes. T

he students input assists us in planning the menus for the upcoming school year of 2023-2024.

Dairy Max Moo-La-tte at PSJA ECHS!

Today students were offered a free coffee along with their reimbursable breakfast meal, in an effort to encourage more dairy consumption in the teens.

We surveyed the students on their thoughts of having coffee available during the breakfast meal services.

PSJA Child Nutrition and Carman Elementary bringing awareness to the cause, "Drink Pink".

The campus also held a "Fuel up to Play 60" celebration in conjunction with the cafeteria. Both events brought awareness to the causes of the importance of good nutrition and physical activity for the body.

Special recognition to the cafeteria staff (Mayra Zepeda, Celia Vasquez, Patricia Garcia, Alma Montelongo, and Susana Ortiz) and the Carman Elementary parent volunteers (Liz Bernal, Veronica Salas Lidia Hernandez, Joanna Herbert, Ruth Valdez, Nicole Vallejo, Esmeralda Renteria, and Ana Trevino), who decorated the cafeteria and assisted in the success of the event!

Today we are close to the finish line.

Did you know in addition to containing calcium for strong bones, milk also hydrates you after a long day? Milk contains vitamins and minerals to help your body recover. Don’t forget to grab your milk as part of your healthy school lunch.

Don’t let anything slow you down. Fruits such as oranges, grapefruit, pineapple, strawberries, and watermelon are sources of vitamin C. Vitamin C is important in healing cuts and keeping you healthy. Today’s fruit choice is pineapple tidbits.

It is National School Lunch Week, and we are going to Get Your Day in Gear with a Healthy School Lunch. It's Wednesday and it is time to get your gears turning with whole grains. Whole grains contain fiber to keep you feeling full longer. With whole grains such as brown rice, whole wheat, and whole grain pasta, you will have enough energy to get through the school day and for those afterschool activities. Today’s whole grain is a hamburger bun or sliced bread.

On this day of Mental Health Awareness cafeteria managers had a session with Valerie Garza, Wellness Coordinator and Coach Carlos Saenz, Strength & Conditioning Coach at the PSJA Natatorium.

Kid's Produce Market made a visit today at Henry Ford Elementary . 🍅🥭🥕

The Kid's Produce Market is a partnership with the RGV Food Bank and United Health Care to provide nutrition education and free produce to children.

Here at PSJA, we strive to provide high quality, nutritious and appealing meals to all students. Through partnership like these, we help educate all students about healthy eating and the benefits of physical activity. Our goal is to help every student succeed by keeping their minds focused on their ability to learn, not on an empty stomach.
Together we are working to ensure a healthier and brighter future for our students.

Congratulations to Zeferino Farias Elementary , Daniel Ramirez Elementary , Augusto Guerra Elementary , Carmen Anaya Elementary , Sgt. Leonel Treviño Elementary , Marcia R. Garza Elementary , and Berta Palacios Elementary for the FFVP Pear-fection Award for SY 21-22.

The Fresh Fruit and Vegetable Program (FFVP) is a federally assisted invitation-only program providing free fresh fruits and vegetables to students in participating elementary schools during the school day. 🍎🍓🍐

These school served 10 unique fruit varieties, 10 unique vegetable varieties, local produce 2 times per month, 1 Nutritional Education Session weekly, and used 75% total funds by the end of the program.

A huge thank you to all our Cafeteria Staff for making this award possible!

In honor of , we like to serve dishes/meals that reflect our heritage.

Today, the "Dreamy Cheesy Enchiladas" made their debut on the menu.

Enchiladas originated in Mexico, where the practice of rolling tortillas around other food dates back at least to Aztec times. In their original form as Mexican street food, enchiladas were simply corn tortillas dipped in chili sauce and eaten without fillings. There are now many varieties, which are distinguished primarily by their sauces, fillings and, in one instance, by their form.
