Fried Cornbread – Southern Cornmeal Hoecakes
These Southern Cornmeal Hoecakes, also known as Fried Cornbread, are a delicious and simple treat. Made with cornmeal, flour, buttermilk, and egg, they cook up just like pancakes in a skillet with your choice of oil.
Ingredients:
2/3 cup cornmeal
1/3 cup self-rising flour
1/3 cup low-fat buttermilk
1 large egg
Oil for frying (about 3 tbsp coconut oil, or your preferred oil)
Instructions:
In a mixing bowl, combine the cornmeal, self-rising flour, buttermilk, and egg. Mix well until thoroughly combined. The mixture should be very moist but not soupy.
Heat the oil in a skillet over medium heat. Once the oil is hot, drop spoonfuls of the cornmeal mixture into the skillet.
Cook the hoecakes until they are brown on one side, similar to cooking pancakes. Flip the hoecakes using a spatula and cook the other side until brown as well.
Remove the hoecakes from the skillet and place them on a plate lined with paper towels to absorb any excess oil. Blot the tops of the hoecakes gently with additional paper towels, if needed.
Serve your Southern Cornmeal Hoecakes warm and enjoy!
