Had a great wine and food pairing experience at last week with sommelier and owner Steven Izzo and Chef de Cuisine . Together, this team is all about making exceptional quality approachable. Caviar on pillowy, crispy tater tots paired with Champagne was a favorite course. The meatballs (better than Italy’s finest) with the Barbera is a must for a second course. Here’s another tip: stemware matters. Place three-day old red wine in a larger bulb glass, like a Bordeaux glass instead of an all purpose glass, and aerate wine by pouring a smaller amount in glass than you intend to drink. Swirl vigorously a few times. This will diminish any imperfections the wine has. Cheers!

Loving this rap video from Cristie Norman - Somm at Spago. Hilarious account of people being flashy with their money and ordering the most expensive things that don’t go together at all. It happens all the time in restaurants where people order oysters or caviar and a Napa Cabernet. While we always say you’re never wrong as long as you order what you like, this combination is objectively disastrous.
