Metabolic Balance USA All-Natural Weight Management & Personalized Nutrition Dr. Funfack committed his whole life to the notion of how to stay in good health.

In the early 1980s, when Dr. Wolf Funfack was writing his doctoral dissertation at the Free University of Berlin, the medical world was in transition. Dr. Christiaan Barnard had just become internationally recognized for performing the world’s first heart transplant. At the time, although slightly less fashionable, Dr. Funfack was working on a more-down-to-earth and practical dissertation topic: “

Obesity in Infancy and Early Childhood.” Instead of posing the question, How can I treat disease or replace diseased organs? After spending 10 years in the cardiology unit at Moabit hospital in Berlin, he took his family to Isen, in the foothills of the Alps. There he established his own medical practice. Dr. Funfack began noticing that a number of his patients were gaining weight. At the same time, he noticed a worsening of patients’ blood values, a deterioration in patients’ quality of life, and increases in disease. He treated all of his patients with the most advanced treatment methods available worldwide in nutritional medicine. But those methods seemed to work only for the short term. He also began noticing that he, too, was gaining weight and that his blood values were worsening. At that time, his wife, Birgit Funfack, was training to become a naturopath. She brought Dr. Funfack new insights, such as the theory that all physical processes should be seen as individual processes that are influenced by a multitude of factors. The two began exchanging information and experimenting to see whether small changes in their own habits would have an impact on their health and well-being. In developing their new theories, they brought in another expert: Birgit's sister, Silvia Bürkle. As a food technologist, Silvia viewed foods and their effects from a different perspective, which immensely enhanced the discussions between the three. Those events marked the beginning of Metabolic Balance®. Silvia Bürkle classified all foods by their individual components. The three founders discussed and revised their evaluations and finally checked the accuracy of their methods by testing their nutritional plans on themselves. Their success was nothing short of impressive, and word got around. Soon, everyone wanted to take part in this successful nutrition program, and Metabolic Balance® became well-known in and around Isen. Within a short time, the workload become so much to handle that the founders developed a program that would enable them to create the individual nutrition plans on a larger scale. Dr. Wolf and Birgit befriended physicians and naturopaths to help them supervise their growing list of clients. With that, Metabolic Balance® was born. The Metabolic Balance® software program is based on the German national food database. Centered on the findings of numerous medical research studies, personal research, and experience, the principles of Metabolic Balance® were developed. This complex program gets continually refined and adjusted to reflect current research. Today Metabolic Balance® is widespread. It is well-known throughout Germany and has already gained worldwide interest. The basic concept of individuality has not changed since its original creation. Salmon Filet with Zoodles
This recipe is quick, easy and packed full of delicious flavors.

Ingredients:
2 spring onions
4 sprigs coriander
1 small red chili pepper
2 carrots
1 zucchini
1 lime
1 tbsp. r**eseed oil or coconut oil
2 salmon filets
1 tsp. olive oil
1 garlic clove

Preparation:
Add about 17 oz of water in an electric kettle and heat. Rinse spring onions, coriander and chili under running cold water and dab dry with kitchen towel. Pluck coriander leaves from the sprigs and chop coarsely. Remove the dark green and dry ends from the spring onions and cut them diagonally into fine rings. Remove the seeds from the chili pepper and cut into fine rings. Pour water from the kettle into a small pot and salt generously. Peel the carrots, rinse the zucchini under cold running water, dab dry with kitchen towel, remove both ends and cut into spaghetti form with a spiral cutter or into bite-sized pieces by hand with a knife. Cut the lime in half and press the juice into a medium-sized bowl and add the r**e seed (or coconut) oil. Add the spring onions, coriander and chili to the dressing. Heat a medium-sized pan at a high temperature. Brush the salmon with olive oil on both sides and season with sea salt and pepper to taste. First fry the salmon filet crispy on the skin side for about 2 minutes. Heat the zucchini-carrot-zoodles briefly in a pan and then add to the dressing in the bowl. Season to taste with salt and pepper. Flip the salmon filet and reduce the heat to medium. Press the unpeeled garlic with your hand or the flat side of a knife and add to the salmon in the pan. Arrange the vegetables in the center of the plate, place the salmon filet on top and enjoy!

Zucchini Patties with Avocado Dip
This recipe is a unique and delicious way to enjoy summer zucchini!

Ingredients:
1 serving of vegetables (zucchini, avocado)
1 serving of eggs
3 tablespoons of rye crispbread breadcrumbs
1 clove of garlic
Fresh parsley
Pinch of cumin
Chili
Lemon juice and zest
Oil
Salt and pepper

Preparation:
Wash and clean the zucchini, grate coarsely and mix with the egg in a bowl. Add the rye crispbread and stir well. Mix the dough with 1 1/2 tsp. of salt, pepper, fresh parsley, and a pinch of cumin. Heat the oil in a large frying pan over medium heat. With a tablespoon, place four portions of dough next to each other in the pan. Cook the patties over low heat for about 5 minutes on each side until golden brown. Repeat this with the remaining dough and oil.

For the dip, halve, core and portion the avocado. Add the avocado, lemon juice and zest, garlic and chili to a blender and puree until smooth. Season to taste with salt and pepper. Enjoy the dip and patties together!

This recipe for Radicchio-Tofu-Pasta is not only delicious but also packed full of plant based protein!

Ingredients for 1 serving:
1 portion smoked tofu
1 portion radicchio
1 portion rye pasta
1 tsp. diced shallot
1 tbsp. olive oil
1 garlic clove
Splash of coconut milk
50 ml vegetable stock
1 clove of garlic
1 tbsp. chopped parsley
Salt and pepper

Preparation:
Cut the tofu into small cubes and sauté. Clean and wash the radicchio and cut into finger-thick stripes. Cook rye pasta until al dente (follow package description). Finely chop garlic or press through garlic press. Fry the diced shallots in oil, add the garlic and radicchio strips and steam briefly. Deglaze with coconut milk and vegetable stock. Add the tofu, rye pasta and parsley and mix. Season with salt and pepper and garnish with a sprig of parsley.
