From protein shakes to plant-based foods, proteins shape how food looks, feels and performs. But predicting that behavior has long been a challenge.
A new SDSU-led project, FoodProt, aims to change that.
Supported by the U.S. Department of Agriculture’s National Institute of Food and Agriculture, the effort will bring together decades of research into a single, standardized database to help scientists better understand and predict protein functionality in food systems.
By combining experimental data, computational modeling and collaboration across five institutions, FoodProt is laying the groundwork for more efficient, data-driven food innovation.
The project also creates hands-on opportunities for SDSU students working at the intersection of food science and data science.
