Chef Chad’s Lumpia is way too good not to make all the time.

Ingredients:
1 lb of ground meat (anything)
1 medium onion (small dice)
4 garlic cloves minced.
1 1/2 medium carrot minced.
1 bunch of green onions
1 can of water chestnuts
1 teaspoon of ginger (optional)
1Tablespoon of soy sauce

Directions:
Brown the ground beef and strain put aside. Put some avocado oil in the pan sweet the onion, carrots, water chestnuts, and minced garlic. After a few minutes add the green onion, soy sauce, pepper and salt as need to taste. After a few minutes add in the ground beef to the whole mix. Mix all ingredients very well for about 5 minutes. Lumpia wrappers you must separate. Lumpia or Spring roll wrappers, egg wash the bottom part of the wrapper before putting down ingredients. Roll up the Lumpia closing with the egg wash. Finish by deep frying in oil or frying in a pan about 2 minutes per side. Let cool and enjoy.

My special dipping Sauce: Soy sauce, 2 minced garlic, some green onion minced, habanero sauce or Tabasco sauce, pinch of white wine vinegar.
