If you've never made your own sugar-free applesauce, you gotta try! This recipe is so easy, adds NO sugar at all, and tastes a thousand times better than the processed stuff you buy. Plus, apples are in season right now, so they have loads more nutrition since they're fresh off the tree.

Easy peasy instructions:
Peel, core, and chop 8 apples
Add to stockpot with 1/2 cup water and one tsp cinnamon
Bring to a boil then reduce heat to a low simmer and cover for 25-30 minutes
Remove from heat and add 2 tbsp lemon juice
Let your child help with the hand mashing and serve slightly warm as a dessert (remember FRUITS ARE SWEET TREATS for the body!)

Tip: Freeze leftovers in a quart size Ziploc freezer bag. When laid flat, the bag doesn't take up hardly any room at all and then you can thaw and have fresh applesauce in the dead of winter!

Parent nutrition education is crucial right now, and the Judy Center at Chipman Elementary prioritized that for its families this week. The Veggie Lady taught an evening workshop for busy caregivers on a budget, showing them how to put together simple no-cook simmer and serve recipes like this Sweet Potato Taco Soup using canned black beans and frozen microwaveable sweet potatoes and sweet corn (Hanover brand is on sale 2/$3 this week!). Parents also learned how to make their own taco seasoning for a fraction of what the ready-made packets cost. We shared and learned so much from one another! That was my favorite part!

Making this reel again bc it got so many likes a year ago:
When time is in my favor, I avoid using the microwave. This method here is a simple, safe alternative to reheat leftovers for your child's lunch… Create a double boiler using the steamer insert and put your glass Pyrex right in there for 8 to 10 minutes. Just be careful when transferring the contents to a school lunch thermos so you don't burn yourself!

Parents, if you're looking for healthy & easy, grab a bag of Nature's Promise individually wrapped frozen chicken breasts and thaw a few before work. Use Greek yogurt as marinade, and you'll have some tender juicy meat that your kids will love. (Mine asks for the B**r Can "Chicken seasoning on top.") Steam some fresh broccoli on another burner, and microwave a sweet potato while you're tending to the chicken, and you've got dinner!!

Gotta love it when the Assistant Principal at one of your partnering schools messages you on the weekend telling you she saw a NWT avocado costume at the thrift store and that you better come get it.
Well, I GOT it, folks! Can't wait to get kids trying mashed avocado on organic blue corn tortilla chips JUST by wearing this and making every minute of healthy food exposure FUN for them!

Today we had peas + carrots on the tasting menu! We tried cold crunchy raw snap peas & carrot coins; then we tried the soft warm steamable combo.
The little ones loved counting the baby peas inside the snap pea pods and ordering them from smallest to biggest. They loved touching the rainbow carrots from my garden. And they REALLY loved my plushy pea costume!
The Veggie Lady's lessons don't just introduce healthy foods; they teach several early childhood standards to get kids ready for kindergarten one day!
