There’s nothing like the smell of homemade French toast, but no one likes setting their alarm two hours early on a holiday, or ruining a peaceful kitchen at the start of a long day!

Try this family favorite – which preps well ahead of time – and the whole family will think you slaved away while they were still asleep.

INGREDIENTS:
1 loaf of bread (gluten-free works, too!)
2 TBS melted butter
2 cups of milk
2 tsp vanilla extract
8 large eggs
½ tsp cinnamon
¼ cup sugar

FOR THE CINNAMON SUGAR DRIZZLE:
¼ cup unsalted melted butter
3 TBS brown sugar

Preheat the oven to 350⁰ and lightly grease a 3-quart (or 9x13inch) pan

MAKE THE CASSEROLE: Chop the bread into squares and place in the casserole dish In a large bowl whisk together the milk, eggs, sugar, 2 Tablespoons melted butter, and cinnamon.

Slowly pour the mixture over the bread being sure to cover evenly. Give the mixture a stir using a rubber spatula to coat if necessary.

You want the bread to be evenly coated and wet – note that you may not quite need all the batter, depending on your bread. In a small bowl whisk together the ingredients for the cinnamon sugar drizzle.

Drizzle it over top of the French toast casserole. If baking immediately: cover the pan with aluminum foil and bake for 30 minutes covered.

Remove the foil and continue baking for 15-25 minutes or until the top looks golden. Let cool for 5 minutes before cutting into slices and serving. Careful – the pan is HOT.

If baking later: Cover the pan with aluminum foil and place in the refrigerator overnight. When ready to bake, remove the casserole from the fridge and preheat oven to 350 degrees. Bake the casserole covered with aluminum foil for 30 minutes. Then remove the foil and continue baking for 15-25 minutes, or until the top is golden brown and the bread has puffed up.

Outside in such great weather this afternoon. GeoCache and just running free. But what they said they will miss the most is going to the library all the time. Today was movie during vacation and "The Good Dinosaur" even made me cry. Not sure if it was because my little fell asleep on my legs and I couldn't fell them any more though. Lol I'm so going to miss these kids.

A beautiful morning to watch the birds. I step on to the porch and I am greeted with a "shhh, we are watching the birdies eat" and who am I to stop their wonder. We identified three chickadees, a woodpecker, and a robin. 😊

We started drawing/writing about our favorite activities that we have done together since we have been together. It's clear to me that several of the kids are pretty upset we won't get to go to the pool together this summer. And that we HAVE to do more GeoChache points before I close. 😢 I'm really going to miss these littles.
