Heartfelt thank you to all working at Loudoun County School Nutrition Services. Your steadfast dedication to the community is amazing.
I am incredibly proud of my former managers, their staffs, admins and SNS office for consistently trying innovative ideas that provide great meals at school that help students be ready to learn. Wings out and soaring!
Will lunch be served on site this year at Lincoln Elementary? The parents would like to see equitable food choices for their children and for their kids to eat warm food with sauces off real plates, not in a dry, tasteless form from plastic containers. We still have not seen any real data that this situation actually saves a dime (despite this being requested by several parents and the PTO). As the only school in Loudoun County to have food shipped in for elementary kids we consider this a very unfair treatment.

The decision to truck food to Lincoln Elementary is the most ridiculous move I have ever seen any school system make.
I would like to know who made the decision to deprive only one elementary school in Loudoun county of on site, freshly prepared and cooked meals (Lincoln Elementary, Purcellville)? I would also like to see the actual data on how much money is really saved by this action. Our school has now has a brand new $4500 oven that is NOT being used, meanwhile we have kids forgetting to order lunch who then have no food for the day, with no back up supplies on site. This seems like a totally well thought out and rational decision. I’m sure no one who was part of this decision-making process would want their child to be treated this way. The pared down food options are a disgrace, are far, far from balanced and repeat on a loop weekly. Shame on you! Parents are waiting to see data to support your actions! This is a matter of child welfare, equity and safety. Way to go for showing our kids a variety of healthy eating options! Kids should be able to see the food that they wish to purchase , not check it off a menu like a hospital stay!

National fun with fondue month

November is NATIONAL FUN WITH FONDUE MONTH!
Join CHEF FEIST from Cedar Lane Elementary School in creating an Apple Cider Fondue.

Fondue derives its name from the French word β€œfondre” which means β€œto melt.” Three types of fondue have developed over the years and each has flavor profile all its own.

Cheese – The oldest fondue style and believed to have been developed by the Swiss, cheese is versatile. Blend a variety of cheese choices with white wine and dip vegetables, meat, and pieces of bread to have a complete fondue experience.

Oil – While the French originally developed this savory fondue option for steak, we are only limited by our imagination. Add seasonings, dipping sauces and your choice of protein and the fondue celebration begins!

Chocolate – When the United States discovered fondue, they added dessert. Dip fruit, pretzels, or cake bites. There’s really no limit to what we will fondue.

Ingredients

1 clove of garlic halved
1 cup of apple cider
1 teaspoon of your favorite hot sauce (optional)
13 ounces of blended cheese shredded (Emmental Swiss, Gruyere cheese and cheddar)
1 tablespoon of cornstarch
1/8 teaspoon nutmeg
1 tablespoon cinnamon sugar (mix 2 teaspoons sugar, 1 teaspoon cinnamon)
2 apples cut into slices
Β½ loaf of French Bread cut into cubes

Method: Rub garlic on the bottom and sides of the saucepan then leave in pan add 1 cup apple cider. (remove garlic optional)
Then add hot sauce and seasonings, nutmeg, cinnamon let simmer. Then toss cheeses in bowl with cornstarch. Add cheese to apple cider small amounts, stirring and it will all blend. Pour into fondue pot and keep warm.

Use skewers to dip your sliced apples into the fondue pot and swirl on the cheese. Don’t drop your apple or bread or you will have to kiss the person next to you.

Last week, LCPS intern Amy, had the privilege of training with Karen Sopko, School Nutrition Training Manager at Riverside High School. Food Safety is a top priority at LCPS and Karen demonstrated the method she uses for calibrating her thermometers every day to ensure that all foods are cooked and cooled to the appropriate temperature.

Karen has been a Nutrition Manager at LCPS for 10 years. Her favorite part of being a trainer for other nutrition staff is seeing people grow professionally, accomplish workplace goals, and demonstrate the values of the LCPS nutrition department. She attributes her school cafeteria's success to her focus on customer service and serving top quality food.
