Studyο½50+ Years of Restaurant Tipping Research Part I: Theoretical Foundations and Significant Research Themes
Tipping remains one of the most debated and culturally embedded aspects of restaurant serviceβfunctioning simultaneously as a social norm, economic incentive, motivational mechanism, and compensation practice. Despite decades of scholarship, however, tipping research has remained fragmented across disciplines and theoretical perspectives.
In a recent article published in the Journal of Hospitality & Tourism Research, Cortney Norris (University of South Carolina), Nick Johnston (University of Arkansas), and H.G. Parsa (University of Denver) provided the first comprehensive thematic synthesis of restaurant tipping research published between 1974 and 2024.
Using a PRISMA-guided systematic review and thematic analysis, the authors identify nine major research themes:

π Techniques to increase tips
π€ Why customers tip
πͺ Operational perspectives

β¨Beyond organizing the literature, the study synthesizes the theoretical foundations underlying these themes, highlighting areas of convergence, divergence, and important conceptual gaps across the field. By establishing a clearer field-level structure for restaurant tipping research, this review provides an important foundation for cumulative theory-building and future scholarly inquiry.
