Thank you to Iowa Pork for providing coupons to buy pork!

ProStart 3 students learned all about smoking pork butt. We learned how to prepare the butt by injecting it with apple juice and putting on a rub. The pork butt went on the smoker at 11:30am and was pulled off around 10:30pm.
We have a tradition with our seniors known as "The Last Supper" as this was one of their final labs before graduating. The students chose pork butt as their main meal and then made sides to go along with it including focaccia bread, smoked gouda mac and cheese, and s'mores bars.

The ProStart 3 class which included three seniors ended the year with a bang! Thanks to grant money I was able to purchase a smoker and thanks to the Iowa Beef Industry Council I was then granted money to purchase a beef brisket.

ProStart 3 students learned all about smoking brisket. Bob Noble (former Iowa Cattlemen's Assocation president) was a guest speaker and told us how to prepare the brisket, cutting off some fat, injecting it, and then finally the rub. The brisket went on the smoker at 8:30am and was pulled off around 7:00pm. We have a tradition with our seniors known as "The Last Supper" as this was one of their final labs before graduating. The students chose brisket as their main meal and then made sides to go along with it, cheesy potatoes, snicker apple salad, and banana cream pie.

I would like to send a huge shout out and thank you to Shop on State for the grant money received to support the Big Brother/Big Sister mentoring program at Riceville CSD! Numerous board and card games, craft and art supplies, legos and other building toys, dominos, flash cards, a storage cart, and more were purchased thanks to the generosity of Shop On State!
