If your honey crystallizes quickly that means it’s really good honey full of nutrients. You can place it on your smallest burner in a small sauce pan filled with water and on the lowest temperature setting it will come back to life in an hour or so. Low heat and bringing it back slowly preserves the nutrients in the honey. You don’t want to pasteurize it!

When temperatures in the winter drop below 50 °F (10 °C), honeybees retreat to their hives and form a winter cluster to keep warm—sort of like a giant three-month slumber party.
