The Food Safety School is a hybrid-course is designed to help beginning, small, and growing value-added food businesses learn the basics of food safety by addressing North Carolina food safety regulations, factors the impact microbial growth, methods for producing safe food, food safety system development, and next steps for growing your food business. Hosted in partnership with the NC Food Innovation Lab, the day will include a tour of the Innovation Lab facility and overview of how they can help growing companies.

Our students Think and Do in and out of the classroom!
Last week, 9 FBNS students attended Agriculture Future of America’s Leaders Conference, making the largest delegation of Food, Nutrition or Bioprocessing Science students in the country. Each was selected from a competitive applicant pool. They spent the conference networking with industry professionals and attending sessions that developed competencies for professional success. On the final day, Food Science student Abigail Commodore was selected to be on the Student Advisory Team, the nationwide student leader team who plan and facilitate AFA’s Leaders Conference and Institutes each year. Abigail becomes one of only 6 NC State students ever selected to the role, and the first from FBNS. Congratulations, Abigail!

Join us in congratulating Yijing Shao, who recently successfully defended her PhD! Yijing has been a member of Dr. Haotian Zheng’s lab. Her research is about understanding milk protein ingredient functionality in model foods. One of her research projects focused on studying phase separation in UHT reconstituted skim milk by developing Raman spectroscopy–based predictive models and identifying key mechanisms. Her other research project explores the interfacial dynamics of oil-in-water emulsions stabilized by whey protein aggregates, revealing their enhanced stability and resistance to digestive stresses compared to the parental whey protein isolates. Yijing will work in industry after graduation and is interviewing for R&D scientist positions. We are proud of all that she has accomplished and look forward to seeing her continue to succeed in industry. Congratulations, Yijing!
