Buttery Spritz Cookies for Christmas. Caution....they are addicting. I made these in my little countertop oven this year. I may need to lower the temperature using this oven.
Buttery Spritz Cookies
1 1/2 cups butter
1 cup sugar
1 tsp. baking powder
1 tsp. vanilla
1 egg
3 1/2 cups all-purpose flour
Beat butter in a large mixing bowl with an electric mixer on med. speed for 30 seconds. Add sugar and baking powder, beat well.
Add egg and vanilla. Beat until combined.
Beat in as much flour as you can. Stir in remaining flour with a wooden spoon. Do not chill dough.
Pack dough into a cookie press. Force dough onto ungreased cookie sheets. If desired, decorate them with colored sugar, or sprinkles.
Bake at 375 degree oven for 8-10 min. or until edges are firm but not brown. Remove cookies and cool on wire racks. Makes about 84 cookies.

So....this is what I meant when I said the gas oven doesn't like me. No matter what shelf I use, the top doesn't cook!

Hellooo Cooking Groupies!
I know it's been a while since I posted. It seems to be less expensive for just the two of us to eat out than to cook at home. 🤔 Also, the gas oven here doesn't seem to like me.
Soooo.....I just have to share this 2 ingredient recipe for Bagels. Yes, you read that correctly. You can make these faster than it takes to warm up your car and get to the Bakery.
1 3/4 cups self rising flour
1 cup plain Greek Yogurt
1 Tbls melted butter
1 Tbls. Sesame seeds or your favorite toppings
In a large mixing bowl, add
the flour and yogurt and mix
until combined. If the dough
is too thin, add more flour. lf
the dough is too thick, add more yogurt.
Lightly flour a kitchen
surface and transfer the
dough on top. Knead it
several times, then divide it
into 8 portions
Roll out each portion of
dough into a long, sausage
shape and connect them at
both sides to form a bagel
Line an air fryer basket with
parchment paper. Brush the
top of the bagel with the butter then Sprinkle the toppings.
Place 3 or 4 bagels in the air
fryer basket and air fry at
180C/350F for 10 minutes
or until golden around the
sides.
Remove the bagels from the
air fryer basket and place the
remaining bagels to cook
Repeat the process until all
the bagels are air fried.
Slice, toast and enjoy!
