There are many ways to include fresh fruits and vegetables in school lunches, including:

Veggie sticks: Cut carrots, celery, cucumber, and bell peppers into strips for dipping. You can pack dips like hummus, peanut butter, salsa, or low-fat ranch dressing.

Fruit salads: You can enjoy fruit salads for lunch, not just for picnics and barbeques.

Smoothies: You can add vegetables to a smoothie and send it to school in an insulated drink bottle.

Wraps and sandwiches: You can add lettuce, grated carrot, or cucumber to wraps or sandwiches.

Pasta salads: You can mix leftover whole grain pasta with fresh cut vegetables, olive oil, and garlic or light Italian dressing.

Skewers: You can make skewers with cherry tomatoes and mozzarella, watermelon, feta, and tomato, or yellow pepper, tomato, and mozzarella.

Muffins: You can make muffins ahead of time and freeze them until you need them.

You can also try rotating through different combinations of fruits and vegetables each week.
We like to keep it interesting and exciting for our students.
