I don’t know about you, but my body needs some serious attention after all of the holiday festivities. I’m super excited to get back on track with workouts and a meal plan and I’d LOVE for you to join me.

Very rare event! I caught an avocado at that exact moment of ripeness. I usually either let them rot or I peel them to early and they are hard as a rock. This one was perfect.
Did you know that avocados count towards fruit AND vegetable intake and provide several under consumed nutrients? They are heart healthy as they provide naturally good fats that can lower your risk of heart disease and stroke. They are the only fruit with good fats and they don’t raise your LDL aka bad cholesterol. They are cholesterol, sugar, and sodium free. Our bodies can only absorb vitamins A, D, E, and K with the help of dietary good fats like avocados, so eat up! If you don’t like eating them, then add them to a shake or smoothie. You’ll never know it’s in there. It’s also a great way to get healthy fats into your kids without them knowing. These green beauties are essential for normal growth and development of the central nervous system and brain.

I have a really bad habit of not eating all day. The only way for me to stay fueled properly is to plan ahead. That’s a challenge too because I usually wing everything, but I’m trying! I’ve been making an effort to prepare my lunch the night before or the first thing in the morning. I’m busy during the day and I think that’s why I don’t eat. Having it made and ready makes it super easy for me to grab and eat.

Here’s a quick and tasty lunch recipe for you.

Chickpea and Avocado Salad

Mash one can of chickpeas and on avocado in a bowl.
Don’t worry if the chick peas don’t smash. It’s fine.

Add 2 stalks of diced celery, 1 medium red bell pepper, 2 teaspoons of dill w**d, 1 minced cloves of garlic, 3 Tablespoons of Greek yogurt, 1 1/2 teaspoons of Dijon mustard, 3 teaspoons of lemon juice, salt and pepper.

Mix it all together and serve on a wrap, on bread, or by itself.

Tortellini, Apples and Sausage Soup

Cook sausage in a skillet for 6 to 8 minutes over medium-high heat until no longer pink; drain if needed. Transfer to a crock pot.

Add carrots, onion, garlic, chicken broth, salt and pepper flakes to slow cooker. Cover and cook on high for 3 to 4 hours or until vegetables are tender.

Stir in tortellini and cook covered on high for 15 minutes.

Stir in spinach and whipping cream (you can skip the heavy cream if you want) and continue cooking 5 to 10 minutes or until spinach is wilted and mixture is heated through.

Top with shredded parm and enjoy!

It’s apple season! Here in southeast Pennsylvania, apple season is in full swing. We happen to have an apple orchard nearby and we love visiting there every fall to pick apples. We just brought home a half bushel and I’m so excited to whip up some delicious meals and desserts all with apples as an ingredient. Stay tuned for some recipes!

This salad is flipping AMAZING!!! Truth be told, I have to choke down vegetables unless they are doctored up with all kinds of spices and sauces to make them delicious and not so boring. Nothing worse than a boring salad that makes me want to binge a package of Oreos instead.
Recently I started paying attention to my protein, iron, and fiber intake because I know it’s usually way lower than what my body needs. This recipe fits the bill for tasty and packed with protein, fiber, and iron.

Recipe makes 2 meal-sized servings

Ingredients:
1/2 cup cashews
1/2 of sweet onion
1 tsp olive oil or spray
1 jalapeño
4-6T of sun-dried tomatoes in oil (California Sun Dry Julienne Cut with Herbs are my preference)
3 slices of bread (Dave’s Killer Organic 21 Grain Thin Sliced Bread is the bomb!)
1 400g can of brown lentils
100 grams or more if you want of arugula or whatever lettuce you like. I cut a mix straight from the garden.
2 T balsamic vinegar
Salt and pepper to taste
1/4 cup of craisins or raisins
1 tsp maple syrup

Roast the cashews on low heat for about three minutes in a pan. I use cast iron for everything I cook! Then throw them into a large mixing bowl.
Dice up and fry the onion in olive oil for about 3 minutes on a low heat then move it to the bowl.
Chop the pepper and dried tomatoes. Cut the bread into big croutons. Add them all to the pan and fry until the bread is crunchy. This takes awhile. If you don’t have time, move it to the toaster oven and broil until crunchy. Season with salt and pepper.
Add greens and craisins or raisins to the bowl.
Drain the lentils and add them. Add maple syrup and balsamic vinegar and toss it all together.
You can serve with the crouton mix on top or mix it all together, which is what I did.

Tomatoes
Browned ground sausage
Cup of cooked orzo
Mint
Feta
Onion, garlic, and whatever else

I am the type that needs small goals and small wins to keep me moving and motivated. If a goal is too big or the win too far off in the distance I get really bored and fall off the plan.

The reason I have been able to stick with Beachbody programs for the past 6 years is because they always have new programs. It keeps things new, fresh, and exciting. I’m also the type that thrives on community and accountability. Put me and a group of like minded people with daily check-ins and I’m gold.
