I HAVE BEEN THINKING BACK TO ALL THE COOKING CLASSES I HELD AT MY HOME PRIOR TO THE PANDEMIC. I SO MISS TEACHING YUMMY MEALS AND CONVERSING WITH ALL OF YOU. MY HUSBAND AND I HAVE DECIDED TO PUT OUR HOUSE ON THE MARKET AND MOVE TO COLORADO TO BE NEAR OUR CHILDREN. IT IS A BIG MOVE FOR US BUT WE WANT TO BE CLOSE TO FAMILY. I WILL BE AVAILABLE FOR VIRTUAL CLASSES ONCE SET UP IN DENVER....PROBABLY IN THE SPRING. I WILL KEEP YOU POSTED ON FACEBOOK AND LOOK FORWARD TO SEEING YOUR HAPPY FACES! Doesn't this look incredible? I always think about what the plate will look like. This one is a winner for color & texture color. This Is from the NYT food blog. Sheet-Pan Baked Feta With Broccolini, Tomatoes and Lemon. Sheet pan baked feta, broccolini, tomatoes & red onion. I'm going to make it this weekend and will report back!

There Is nothing better than summer produce! Tomatoes are at their peek so take advantage of the next couple of weeks and make as many tomato recipes as you can! A simple Caprese salad of tomatoes, mozzarella and basil leaves takes minutes to make and works with just about any entree. I like to drizzle Basalmic Syrup on mine.

Another quick and easy side dish is melon with prosciutto. The platter looks so pretty and the salty prosciutto works beautifully with the sweet melon

I love making grain bowls and mixing up ingredients I already have in my fridge or pantry. I sous vide a turkey tenderloin Thursday night which was delicious and had some leftover. So that's what inspired this bowl of brown rice, tomatoes, butternut squash, avocado, hard boiled eggs, red onion & gorgonzola cheese. Grains, protein & vegetables. Fun to change it up with quinoa, barley, couscous, etc!

We are all cooking more at home these days and after working remotely and/or helping your children with their online classes, coming up with a tasty but easy dinner can be a challenge. My online classes will focus on family friendly, easy menus that call for ingredients that you are likely to have in your pantry. Many of the recipes can be prepared ahead to save time.
