๐ซ Why the science matters in home canning ๐ฌ
Ever wondered why you canโt just โwing itโ with canning times? ๐ค
Itโs because not all foods heat the same way inside a jarโand that matters for your safety.
Thick foods ๐ฒ, big chunks ๐ฅ, tightly packed jars, and even sugar or protein levels can all slow down heat pe*******on. That means some spots in the jar (called the โcold spotโ) take longer to get hot enough to kill harmful bacteria.
โ ๏ธ For low-acid foods, this is especially criticalโbecause Clostridium botulinum (the bacteria that causes botulism) can survive if processing isnโt done correctly.
