The recipe can be found in my new cookbook The Nutritionist’s Kitchen.

This recipe celebrates brown rice and mung beans as the base and it’ soooo good and super nutritious!

I recently contributed to 2022 Food Predictions—Five Trends from Farm to Table and talked about gut health and the importance of soluble and insoluble fiber. Check it out 🔜 Link in bio!

“As a registered dietitian nutritionist, I follow the research and the research shows us just how important fiber, insoluble and soluble fiber, is for a healthy microbiome…”

BONE BROTH 101

November 30th, 5-6 pm PST

“When you need some comforting nourishment, look no further than bone broth. As a registered dietitian nutritionist and postpartum certified doula, cookbook author Carly Knowles is often asked about bone broth. How to make it, why it’s beneficial, and its overall efficacy. In this class, she will explain how to make bone broth at home using both stove top and instant pot methods. She’ll demonstrate what to look for when picking out quality bones, and show how to extract the most flavor by making two distinct types of broth: Chicken Bone Broth with Lemon and Turmeric, and Beef Bone Broth with Mushrooms and Rosemary.”

Tempeh! 🥳 That’s me on sharing my love for tempeh and The Simplest Tempeh Tacos recipe from my cookbook The Nutritionist’s Kitchen. I love telling people about the health benefits of tempeh and eating whole soy foods.

Did you know that tempeh is:
-an incredible source of plant-based protein?
-full of vitamins and minerals like iron and probiotics?
-delicious and a blank slate for so many great flavors?
-not a concern for increasing testosterone, causing hypothyroidism or breast cancer?

You can read more about this and find the recipe for my tempeh tacos in my new cookbook. Give it a try! The recipe takes all of 15 minutes to make and is a fabulous whole foods recipe for you and your family.

The link to my cookbook can be found in my bio. Happy cooking!

Chocolate and Chai Spiced Granola. Watch the YouTube video (link in bio) of me making this delightful and seasonally inspired granola. It’s the perfect snack for our road trip to the Oregon coast this weekend.

Do you have any fun Labor Day plans?! Besides making this granola of course 😉

Salmon en Papillote with Seasonal Vegetable Ribbons (salmon cooked in parchment paper pockets). This recipe can be found in my cookbook The Nutritionist’s Kitchen and when you subscribe to my newsletter that goes out weekly every Friday.

My “meal plans” aren’t diet-driven or the calorie restricted meal plans you may be accustomed to from other dietitians and nutritionists, but rather a collection of tasty and seasonal recipes to keep you inspired and interested in cooking delicious and healthy food especially during the week when we can all use a little extra inspiration. I share some original recipes and also those from other home cooks, dietitians, and chefs.

You can subscribe on the homepage on my website (link in bio). See you there!

Have you ever made homemade yogurt? It’s so much easier than you think! You can make it on the stovetop or in an Instant Pot. Both ways are fairly simple and deliver the most velvety, creamy yogurt.

Benefits for making your own yogurt:
-high quality ingredients only
-no fillers, preservatives, or undesirable ingredients
-choose your favorite seasonal flavors
-control the fat and sugar content
-no plastic containers
-saves you money
-never run out!

I highly recommend giving it a try! I have two recipes available now on their blog (link in my bio). Check them out and let me know what you think. Make sure to tag me if you make some!

I’ve been loving drinking iced green tea this summer! makes the most delicious Sun Goddess Matcha which is a ceremonial grade USDA certified organic matcha in convenient “matcha sticks” for easy on-the-go drinking.

Green tea has been studied for many health benefits but one aspect in particular I find very interesting is the L-Theanine content of green tea. L-Theanine is an amino acid that’s been shown to boost mood and cognition and have a calming effect. That’s why you can drink green tea and not get jittery. It’s a great alternative to coffee!

Food and bev brands send me products to try all the time but this one is extra special and something I will continue to buy over and over again. It’s really smooth, slightly sweet, and really refreshing! It’s easy to make—empty the packet into a mason jar with 12oz of cold water (or hot) and shake to dissolve. Pour over ice and enjoy. It’s the perfect summer pick-me-up!
