Your girl is happy! I got my order of vegan pork skins today. I ordered the variety pack and every flavor is fire. This is not a sponsored add - I just wanted to put y’all on. āœŠšŸ½ My favs in order: bbq, nacho cheese, original, and hella hot (only because I don’t think it’s hot at all šŸ˜‚).

We cut up a bunch of fruit (honeydew, watermelon, and mango). It’s more cost effective to buy the fruit and cut it yourself!


Two vegan sausage patties. .

Vegan Sausage links cut into pieces (cooked separately then added to the vegetables). I sautƩed (in vegetable broth) broccolini, bell peppers, mushrooms, spinach. Seasoned with black pepper, lemon pepper, onion powder, and a splash of soy sauce and liquid smoke. .

Drinking acai smoothies (with blended acai powder, almond milk, frozen pineapples and strawberries, and a fresh banana). .

to when I was in Kentucky a few weeks ago at a restaurant called V-Grits! I had some fried macaroni and cheese balls. Vegan of course. They were 10/10. Here’s the thing, I’m always vegan but I am most definitely a junk food vegan probably 20% of the time. The other 80% of the time I’m eating food straight from the ground (meaning unprocessed). I feel like I don’t share that enough with you all. But I too am also amazed at the options that exist at restaurants!

Can we talk? I’ve been plant-based for almost two decades. Literally 17 years.

Recently I transitioned to veganism. And let me tell you...the last FOUR years as a vegan has been amazing. I love this lifestyle that allows me to fuel my body with energy giving, delicious, satisfying meals. I am never looking back.

And yes! I’m a 24/7 vegan, errrday, even when I’m on vacation. Committed baby. And guess what! I have the blueprint.

Here’s what I had for lunch today! It’s a veggie pilaf that’s of course . I modified the original recipe from to ensure that its oil free, vegan, and flavorful.

Here it is:

- sautƩ, in water, one small white onions and one half of a red bell pepper. Add one tbsp if minced garlic.
- Then add one cup of uncooked brown rice, one can of garbanzo beans and 1 3/4 cups of vegetable broth.
- Bring to a boil. Reduce heat to simmer for 20 minutes or until rice is tender.
- Remove from heat. Add 1 tsp of each: lemon pepper, cayenne pepper, and black pepper for spice!
- Parsley or cilantro for garnish (optional).

My husband and I spent everyday at Petunia’s Pies & Pastries while we were in Portland. I wish I was lying! They have delicious lemon cake, birthday cake, muffins, doughnuts, but our favorite was breakfast! Pictured here is the biscuits and gravy with a side of vegan sausage. The second picture is Auston’s waffles. I rate everything here a 10/10. Also my plant based pals, everything here is vegan and gluten free. This is not sponsored, I just am a very happy customer. .
