Seven Hills Honey

Seven Hills Honey Small batch raw artisan honey, never heated or filtered. Each batch of honey is kept pure from each location the bees are located at. Michael Metz-Beekeeper

Urban, basswood, wildflower, clover, alfalfa and buckwheat honeys available. Part of the local foods movement is the ability to track the food on your table directly to a local grower. It is our vision that this page will take that to a new level. This page will allow people to follow us beginning at the stage where our hives are mere stacks of lumber. People can then join us in the journey of ass

embly to painting and placement of the hives, installation of the bees, maintenance and observation of the hives, harvesting of the honey, bottling and packaging of the honey and the production of other bee-products. It will enable people to watch their honey being made, and in the future, allow customers to look back and see what went into their jar of honey or their tube of lip balm. It provides a new appreciation for what goes into each bottle and opportunity for conversations/answers from those making the product and tending to the bees. In addition, times will be updated for opportunities to observe us in action in the hives, and if desired, the opportunity to get hands-on with the bees. This is going to be a learning experience for all involved, as this will be our inaugural year as Langstroth beekeepers. We have a top bar hive at our home for pollination and as a hobby, leaving all of the honey that they produced for the bees to eat through winter. So, get ready to learn all you ever wanted to (and more!) about honeybees and the honey-making process.

Happy Sunday to you!

Let's talk a bit about honey harvesting and robbing that can take place in Fall or late Summer.
When I harvest early in the season I usually remove frame by frame. Which is time consuming but I can also select which frames are actually ready and cured. Many at times may not bee. Too high of moisture content or empty frames. So those are left behind.
Late season like now I try to use a "Bee Escape Board".It's a one way type puzzle board that the bees can leave the honey supers but not get back in. A double triangle on brood side and a 2 inch hole that faces the honey. They go back down but cannot get back up. They will figure it out after a day or 2 though.
Part of setting those on is to make sure all holes and cracks are secured so they cannot enter from outside. Occasionally I miss a crack.🀣 Luckily this time i went back the next day since it was cooler the night before. They like to bee together when temps drop. This broken spot on the super allowed them to get in and start robbing honey out from MY honey.🀣
They work quickly. It's like a Baltimore Riot. They chew open the cells and quickly steal what was their honey back again. Other hives join in and turns vicious incredibly fast. Often results in loss of colony.
I went back to the Grafton yard to harvest and I noticed bees in honey box but I didn't think too much until I was spinning. Then I found the damage they did. They removed about 3lbs of honey so no great loss.
Robbing will also happen when a colony is weak and others are getting desperate for more honey. I lost 3 hives a couple years ago and hundreds of pounds of honey due to being behind in harvesting since it was so hot.
Lots of food for bees to eat still this year. Hoping to get some Fall honey but I also would like to finish up early this year. Back to bottling.

Bee seeing you!

Guess what I am doing today? 🀣

That batch turned out to be a bit more than I expected which my estimate when I pulled about 30 to 34 gallons.

That is just shy of 42 gallons, which is 500lbs. 42 is about 1 inch from top. I will get a perfect measurement once it is in jars.

Good Morning Port Washington!!

What a bee-autiful Morning! I don't think it gets any better than this in Port.

Farmer's Market now until 12:30 p.m. in downtown Port located on Main St.

I have been so busy the last couple weeks with harvest and bottling I had not had a chance to cut into the new seasons Comb Honey.
The Saukville girls did an unbelievable job at filling what I gave them. It probably cost me 2 boxes of regular honey for jars since their two hives were completely full up and fully capped in the comb boxes. In the years I've been doing this I have not had such full and complete frames of comb honey. Absolutely bee-autiful!🐝
The bad news is there as of now no smaller pieces for the mini cups. I have a couple other hives that may still deliver some smaller pieces, time will tell.
I do have full frames of comb that look incredible that may be wanted for a wedding table set up. Inquire if needed.

Good evening.

Been doing lots of jar filling the last couple weeks. And it made me wonder what year I got the bigger equipment.
August 8th, 2016

So I've been running honey using this equipment for 10 years. Hundreds of gallons. 😳😳 I may need to add it all up this Winter just to see actually how much. I know it sure made the job easier.
It has all held up very well. Not as shiny as it was when new but still works like it did on day one. Hopefully someone will use it long after I am gone and take as much pride and enjoy filling every jar as I do.

Saturday's weather looks to be rainy again. 😐
I will bee there though. I may not set up all the decorative jars, wax and cut comb though. This canopy is have is getting pretty aged as well and I do not think it has been rained on steadily for almost 5 years. 🀣 So it has bound to have lots of little leaks from being closed up so many times.

Bee seeing you! Rain or shine!

Good rainy morning.

I think for the first time in over 3 years we have rain on a market Saturday.

Not gonna blow smoke at you and treat you like a bee but conditions are horrible unless you are a duck. But it's kind of a warm rain.

For now I am here sitting in my truck. I have easy access to Pints and Quarts and I think the half gallon is easy to grab. But until rain lets up I will stay in the front seat of the truck. 🀣

If i decide to leave I will post that I am gone. Honey is on the front porch as always.
