This elevated three-course experience explores how Filipino cuisine masterfully balances sweet, sour, salty, and umami, shaped by centuries of cultural influence. Indigenous Austronesian traditions bring rice, coconut, vinegar, and seafood; Chinese traders contributed noodles, lumpia, and soy sauce; Spanish colonization introduced slow braises and desserts like flan; and American influence added new textures and comforts.
