Happy National Coffee Day ☕️
A small fermentation fact for your Tuesday:
Coffee beans are traditionally fermented during processing.
The coffee bean is actually the seed inside a coffee cherry, and fermentation can be used to help remove the fruit around the seed before the beans are dried and roasted.
So no, your morning coffee isn't a probiotic drink ;) But somewhere along the way, microbes were involved.
Which means coffee has a perfectly respectable place in the fermentation conversation. Which I want to honour today :)
