Lemon Lush Dessert

Diving into summer with the freshest slice of Lemon Lush Dessert! Tangy, creamy, and absolutely divine πŸ‹πŸ’›

Ingredients:
For the pudding:
2 (4.3 oz boxes) Cook-and-Serve Lemon pudding
1 & 1/2 cups granulated sugar
6 egg yolks
5 & 1/4 cups whole milk or half and half
For the crust:

1 (15.25-oz package) Lemon Oreos (about 29 oreos)
1 & 1/2 cups pecans
1/4 teaspoon kosher salt
4 tablespoons butter, melted
For the cream cheese layer:

1 (8-oz package) cream cheese, softened
1/4 cup butter, softened
1 & 1/2 cups powdered sugar
1/4 teaspoon kosher salt
2 teaspoons lemon zest (from 1 large lemon)
2 tablespoons lemon juice (from about half a large lemon)
Whipped cream layer:

1 & 1/2 cups heavy whipping cream
1/2 cup powdered sugar
1/4 teaspoon kosher salt
1 teaspoon vanilla or lemon juice
Directions:

Soften the cream cheese and butter in a stand mixer.
For the pudding: Whisk together pudding mix, sugar, egg yolks, and milk in a saucepan. Cook over medium heat, whisking constantly until it starts to boil. Remove from heat, let cool slightly, then chill with plastic wrap on top.
For the crust: Preheat oven to 350Β°F. Process Lemon Oreos, pecans, and salt into fine crumbs. Mix in melted butter, press into a 9x13 inch dish, and bake for 20-25 minutes. Let cool.
For the cream cheese layer: Beat cream cheese, butter, powdered sugar, salt, lemon zest, and lemon juice until smooth. Spread over the cooled crust.
Add the cooled pudding layer on top of the cream cheese layer and cover with plastic wrap. Chill for 3-4 hours.
For the whipped cream: Beat heavy cream, powdered sugar, salt, and vanilla or lemon juice until soft peaks form. Spread over the pudding layer before serving.
