What does a morel taste like? It’s a question I still can’t answer. I think the best one I got from Seth Milton which was “the best tasting dirt you’ve ever had” lol. Or today I thought like delicious wood... I have been sampling wooden objects ever since otto has been around ...
But really. I don’t know how to describe it, but it’s delicious.
These are blond morels. Oh so clean. I did not one thing before cooking them, and there was 0 dirt and 0 🐛:)
I saved some of the debris also for lunch... cause it also was very clean except for a little bit of reindeer moss.
😌 🍄 soon the fever dreams of picking morels will begin.

Wanna hear a 👻 story??
An associate of mine showed me some mushrooms this morning he’d thought were “agaricus”(genus which includes the button and portobello).
When in fact he’d picked some death caps!
Very casually after mentioning a few poisonings that had happened lately around the worlds he showed me his mushrooms he’d been thinking about eating… I went on to find out he had many many more at home
I went to the park and found a few for my self. They do… I must say.. smell absolutely delicious!… tempting haha but not that tempting.
Idk. Always surprised by stories like this. Do your research before eating … always!!:)

Have you tried it? This Choco bar by Chris vittles has been a main stay here since before home deliveries have began. I think we started working on this... 2-3 years ago? with chaga, now reishi... who knows what next?:) candy cap? Porcini? Dirt?
These bars are all beautifully tempered to have some bite (i love this so much, I often will freeze sweets for more bite but this ones perfect!), with cooool old school map wrapping (Eric has a thing for it), and the cocoa is single origin sourced from Peru. going down him self to bring the beans back. The Chaga also picked by yours truly.
The flavor profiles of this cocoa are strong with stone fruit. The reishi bar adds the slightest bitter aftertaste which mixes wel with the dark chocolate and the Chaga... maybe adds some vanilla notes as it’s naturally high in vanillin which is found in the birch tree form which it grows.
They both have a double extraction consentrate added so are high in antioxidants and are of “medicinal strength” (tho we are making no medical claims you are welcome to look up the health benefits that are there)

An ode to . Perhaps one of the most magical of all mushrooms. Another harbinger of late fall, these are coming from northern New England mountains.
If you’ve never had em before they can be hard to describe. I do love David Aurora’s description in “mushrooms demystified” and tho perhaps not culinarily minded I find on point, “red hots and stinky socks”. Let’s try another way for the foodies… it has a spicy cinnamony aroma, along with a deep funky earthy note.
Traditional in fall Japanese cuisine.
Dishes like , , matsutake in foil (one if my favs! Slice thin, put in an envelope of tin foil with sake/Kirin/light soy/ginger/yuzu?/etc and roast. Then appreciate the aroma table side!).
also simply sautéed with some butter is just delicious! This mushrooms is all about that magical aroma! Flavor it’s self Is quite sweet!
You’ll find a few different grades. One for you sticklers for shape and one other that give you a little more bang for your you buck. BOTH delicious!
