Brr! It's record breaking cold in KC area! Warm up with this delicious crockpot coconut lentil curry soup! I amped up the nutrients by adding celery, carrots, mushroom, red pepper flakes, cayenne, and then a handful of spinach at the end. I also substituted maple syrup for brown sugar. Delicious!

Made a delicious meal with my local farm vegetables and chicken! Chicken thigh, sweet potato fries, purple cauliflower mash, and sauteed asparagus! What's your favorite vegetable to buy local?

Made this Vegetarian dish tonight with my farm fresh asparagus from Gieringer's Orchard and Berry Farm! It was supposed to be with orzo, but I only had rotini on hand! Mediterranean flavors with a lemon/olive oil dressing, roasted almonds, and crumbled feta over roasted vegetables- mushroom, asparagus, tomato and carrot! So yum! πͺπ½π₯π₯¦π

π€I don't know about you guys, but being home has made me want to bake more, snack more, and bake some more!

πͺπ½ My solution, (at least for the next few days) is PROTEIN BALLS! Such a fun activity to get the kids involved, plus burn a few calories trying to stir these babies! π
π Naturally sweetened, full of fiber, protein and nutrients! (And chocolate of course!)
π€€ Gather your supplies:

2 cups rolled oats

1/2 cup chia seeds
β
1/2 cup flax seed
β
1 cup peanut butter or almond butter
β
2 scoops collagen peptides
β
1 cup raw local honey
β
1/2 cup chocolate chips
β
1 Tbsp cinnamon
πMix it all together and freeze for an hour before transferring to an airtight container in the fridge for when you need or crave a sweet pick me up!

π―π―We made these copycat Chipotle bowls this week, and used the low carb wraps for burritos for the kids! (And black beans in place of pinto as the kids prefer those) I also sauteed red onion and green peppers to add in that veggie vitamin power! πͺπ½π
