This week at KCA:

Tuesday was Nacho day. We had tri-colored tortilla chips, seasoned local ground beef, cumin chicken, chili rubbed tofu, brown rice, roasted vegetables and fresh salsas. We also made a cheese sauce from locally sourced cheeses and milk and thickened it with roasted carrots and squash.

Thursday was burger day at KCA. We prepared veggie burgers with roasted sugar snap peas, beans, tofu and quinoa. In addition, we made local beef burgers. Both were served with homemade ketchup, roasted potatoes, purple cabbage slaw, a kale and sorrel salad and sautéed spinach with garlic.

Friday we had roasted shredded chicken, crispy tofu with a tomato curry sauce, tri-colored pasta with tomato basil sauce and a beef alfredo sauce. We also had black barley, vegetarian chili and chocolate chip cookies.
