Vanella sponge cake
recipe
Ingredients
-2 eggs
-1/4 teaspoon salt
-1 teaspoon vanilla essence (extract)
-1/4 unsalted butter (57g), at room temperature, plus more for the pans
-2 cups all-purpose flour or flour cake (256g), plus more for the pans
-1 tablespoon baking powder
-1 tablespoon baking soda
-1/2 teaspoon salt
-1/4 cups sugar (50g)
-1/4 cups milk
Directions
STEP 1
Preheat the oven to 350 degrees F (176C). Butter cake pans and dust the pans with flour, tapping out the excess.
STEP 2
-Sieve the flour with the baking soda and baking powder to separate and break up clumps, as well as to aerate and combine them.
-beat the two eggs then add the sugar and salt., the baking powder whisk with a hand whisk until combined.
- add the butter in the mixture and beat continuously.
- Add gradually the sifted flour and whisk as needed. Then add the 1 teaspoon of vanilla.
STEP 3
Pour the batter in the prepared pans. Bake until the cakes golden on top and a toothpick inserted into the middle comes out clean, 30 to 35 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Trim the tops of the cakes with a long serrated knife to make them level, if desired.
