Our next comes from Nikki and Lacie, who spent part of their summer in Greece! 🇬🇷

This summer, Nikki Kendrick and Lacie Peterson led students on the Mediterranean Diet Study Abroad in Thessaloniki and Crete. Along the way, they explored Mediterranean food, culture and lifestyle through food tours, hands-on food preparation, expert lectures and time exploring the local terrain.

Nikki and Lacie are NDFS faculty based at the USU Salt Lake Campus, bringing their expertise to students both in and beyond the classroom. Interested in joining them next year? Learn more in the comments!

For this employee , Kimberly Sullivan shares one of her favorite summer moments with us. 🐊

For her birthday, Kimberly’s husband surprised her with a trip to New Orleans. One of the highlights was a swamp tour, where she got to hold a baby alligator!

Kimberly serves as our Business Assistant for USU Wasatch Region, helping take care of the behind-the-scenes details that keep our campuses and team on track.

Today’s features a father-son duo from the USU Wasatch Region, Matthew and Henry Fox!

One of their summer highlights was heading to Daybreak for a Banana Ball game, where they watched the Party Animals take on the Firefighters. ⚾️

Matthew helps students through the testing process as our Testing Center Coordinator, while Henry helps keep the campus running smoothly and ready for students as our Coordinator of Events & Facilities.

You may know Tatyana Felt as our Campus Resource Specialist and Center Manager at USU Orem, where she’s always ready to help students and connect them with the support they need.

Tatyana has been making the most of her summer by exploring some of the trails right in our own backyard, including Timpanogos Cave and Cecret Lake! 🥾
