As we start Black History Month - I'm sharing the main article from the January/February 2026 issue of DAV Magazine.

Unfortunately, the enormously negative homecoming did not get any better through WW2, Korean War, or VietNam. Black soldiers were not seen as humans deserving the same rights nor care as their White counterparts.

Mr. Wright was traveling and sent me a recipe he spotted on Facebook: Collard Greens Cajun Gumbo. Did I say yes? Of course I did.

Prep took longer than expected, and I had to improvise when I realized I didnā€™t have a pot big enough for the smoked turkey drumstick šŸ˜… Out came the crockpot to save the day.

Verdict: Mr. Wright liked it, but expected even more greens (and I already used double what the recipe called for). He added hot sauce šŸŒ¶ļø, while I cooled things down with a couple dollops of Greek yogurtā€”because the spice was definitely spicing.

That's because you didn't see him before his 2 mi walk and 30min ball retrieval game. Before all that activity, he was on the kitchen counter eating 4 raw eggs I brought in from the chickens.

One of the easiest meals I know when cooking for two.

This is a perfect use-your-leftovers dinner. Thereā€™s no real recipeā€¦ but hereā€™s how I do it šŸ‘‡

šŸ‚ Stuffed Acorn Squash šŸ‚

ā€¢ 1 acorn squash (serves 2)
ā€¢ About 1Ā½ cups stuffing per squash half
My stuffing mix:
Ā¼ lb Italian sausage
Ā½ onion, finely chopped
Ā¼ green pepper, finely chopped
1 carrot, shredded
Ā¼ cup cooked quinoa
1 oz cheddar cheese, cut into small cubes
1tsp Tumeric powder

šŸ”Ŗ Directions:

Cut squash in half and remove seeds. Place cut-side down in a baking pan. Add about 1 inch of water, cover with foil, and bake at 375Ā°F for ~30 minutes.
While the squash bakes, cook the stuffing ingredients.
When squash is fork-tender, flip and stuff each half. I add the filling 1 tablespoon at a time, packing it down tightly, with a little cheese layered in as I go.
Cover with foil and return to the oven for 15 minutes.
Uncover and bake another 10 minutes until bubbly and lightly browned.

šŸ„£ I serve each half in a bowl. With protein + grains built in, no sides needed.
