Finally, I told John I would make a Spanish "๐“๐จ๐ซ๐ญ๐ข๐ฅ๐ฅ๐š ๐๐ž ๐๐š๐ญ๐š๐ญ๐š๐ฌ", which is a famous potato omelette. We Argentinians inherited this signature dish from Spain and it's eaten everywhere in the country! It's so delicious but a real challenge to turn the tortilla over in the pan and NOT break it! There is a "national day" for everything and it was ๐๐š๐ญ๐ข๐จ๐ง๐š๐ฅ ๐ƒ๐š๐ฒ ๐จ๐Ÿ ๐Œ๐ฎ๐ฌ๐ก๐ซ๐จ๐จ๐ฆ! This delicious food brought childhood memories of my mother packing the car with all of us 6 kids and going out after the rain to pick up mushrooms under the pine trees. Then we all helpers followed her ritual of slicing them, drying them in the sun, and storing them in jars. My Mom would use them in a multiple of delectable recipes :) She KNEW the health benefits too.

August 18th marked a very special milestone in our lives โ€“ our 23rd wedding anniversary! ๐Ÿ’โœจ It feels like just yesterday that we met at the University of Illinois, two studious souls with dreams and aspirations. Little did we know that our paths would intertwine so beautifully but so challenging as well. Two different worlds and backgrounds: John G. Schmitz, Ph.D. in Philosophy of Education, the thinker, typical Wisconsin boy, German and Polish blend, few words. Me, Ed.M in Human Resource Education, a people person, a talking head and the life of the party, Italian and Spanish... ๐Ÿฅณ๐Ÿ™„
Over the years, weโ€™ve built a life filled with love, not much laughter, but countless memories. Together, weโ€™ve been blessed with two beautiful girls who bring joy and light into our lives every single day. ๐Ÿ‘จโ€๐Ÿ‘ฉโ€๐Ÿ‘งโ€๐Ÿ‘งโค๏ธ Life during and after the pandemic hurt us.
