The semolina flour used to produce Angelos amazing pastas comes from Janie’s Mill in Ashkum, Illinois — a small family farm that grows and stone-mills organic grains into some of the finest flour available anywhere.
Chef Damon take aways:
1. The real magic, however, lies in properly developing the gluten through vigorous 10-minute kneading and allowing the dough to rest for at least 30 minutes before rolling.

We recently hit up the International Food Fest at Saraga, the very place we source most of the ingredients for our international classes. But today wasn’t about shopping—it was about experiencing!
From samosas inspired by Tanzanian street food to incredible empanadas and pastelitos from Las Gochitas, the diversity and flavors were unmatched. As a chef, events like this are the ultimate inspiration. It’s all about opening up the palate, trying new things, and discovering flavors we might otherwise walk right past.
