🌱 Germination Station Underway! 👩🏽‍🌾

🔎We are in search of SEEDS to plant! 🔍

Any type of veggie/herb seed or set would be fantastic. We plan to germinate and observe, and either plant them in our garden here, send them home with our Lexplorers to cultivate at home, OR we can return your seeds to you in the form of seedlings! If planted here, our bountiful harvests will be shared with our community. What we have hanging so far will germinate in the next few days and planted soon! But, we have a lot of hungry bellies to fill, so this isn’t nearly enough!

If you’d like to help us help you (and feed our neighbors!), let us know! Seeds can be mailed to us or dropped off (no contact). If you have seedlings you’d like us to take over care for so you can reap the benefits (we don’t mind!), let us know!

It’s The Random Acts of Kindness Foundation Day! Today, we encourage you to meet a need of a fellow community member via Lexington Mutual Aid. Lexington Mutual Aid is a local, grassroots group doing wonderful work both on and off social media. The people in this group are the folx who live in our community. Your neighbor could have a hurt ankle and the dusty set of crutches you no longer need would make a HUGE difference for them. Or, someone could need a meal. Whatever need you can meet, we encourage you to do so. Thank you for sharing joy and kindness!

Something to start today!

The entire purpose of 1000 Hours Outside is to attempt to match nature time with screen time. If kids can consume media through screens 1200 hours a year on average then the time is there and at least some of it can and should be shifted towards a more productive and healthy outcome! Did you take part last year? We are super excited to give it a go this year as well!

[08/28/20]   Maybe you already know this hack, but it’s new for me! I homeschool my kids and most have never been to public school. They wanted “cafeteria food”, which is not our usual fare. I decided to try it out—lunch lady hairnet and all!— and it was a hit! I will be reusing these portion containers, but I’m also purchasing some more sustainable cups for regular use.

2oz and 4-5oz cups are the perfect size to portion fruits, veggies, and other snacks for grab-and-go during your busy life. If you’re struggling with keeping quick, healthy snacks on hand while doing NTI/Distance Learning/Virtual Academy AND working, this might be a game-changer for you! I prepared lunch in about 15 minutes, and our snack tray in about 7. Try it out and let me know what you think :)

Were you one of the lucky 40ish recipients of a pizza kit from us? This had handmade dough, homemade sauce made from San Marzano tomatoes, and I walked you through how to make TWO delicious pizzas the 🇮🇹 way, step-by-step! Oh man, these were so good. The kids loved it all!

If you’re familiar with redbud trees, you know there’s really something special about these gorgeous blooms. If you’re real country, you might know this as a spicewood tree because in Appalachia, we use the bark of the tree to season venison and other meats. While this tree is actually a member of the pea family (surprising, right?!), these magenta, heart-shaped buds actually have a fantastic flavor. I describe it as similar to strawberries. This week, the kids and I foraged redbuds and made redbud jelly! This was much easier than dandelion jelly, since we didn’t have to destem the redbud blooms. 🌺 out of all the jellies we made this week, this was my favorite. 🌸

The answer to the question that I’m certain has kept you on the edge of your seat is...we have canned over one hundred (100!!) jars of jam this week! What you see here and our last video is actually dandelion jam. How cool is that?? Yep—the yellow weed you see growing freely makes a delicious, sweet jam reminiscent of honey, spring, and simpler times. This is actually a really simple floral jam (in my opinion, but I’ve been canning for a long time) and this absolutely divine shade that can only be described as sunshine yellow is part of the reward for your hard work. This was done with kids ranging in age from 3-11 helping and, yes—even 3 year olds are excellent assistants for the picking and processing portion of this jammin’ activity! I did the actually canning myself, though 🌞 There was plenty of appropriately-leveled work to go around and everyone enjoyed participating in this fun activity! 🌼💛 ☀️
