Are you ready for the best roast leg of lamb ever?
Well, I'm going to let you in on the secret to create the magic of roast lamb - brining!
OMG - brine the lamb with flavorful spices like fennel seed and allspice and aromatics like ginger and garlic and your lamb is going to be top tier delicious! - Then crusted with coriander seed and black pepper before its roasted to perfection.
Now what to serve the lamb with? NOT mint jelly!
Just about every culture celebrates Easter with the sacrificial lamb. Also symbolic in Jewish Passover traditions.

There are many ways to cook lamb with mint without having to resort to mint jelly.
