Pizza School Graduating Class May 16, 2026 - Pizza Professor Shah’s Report: “Lena is a New Yorker through and through and came ready to level up her pizza game at home. Lia (Albany) and Lana (Westchester) were gifted the class, and Lia, who LOVES making pizza in her new Ooni, was excited to really dial in her skills. Victor and Kat (Upper East Side) joined us for a fun date night and had such a great time that they told me they already want to come back for their anniversary. Alberto and Alexa (Astoria) absolutely threw down and made some incredible pizzas, while Jamie and Evan (Colorado) visited NYC on a mission to create the perfect pizza. Lauren and Sara (South Carolina) turned their mother-daughter trip into a pizza-filled adventure and made some fabulous pies along the way. Russell, Ruth, and Kirk (Newfoundland, Canada) were true pizza-making machines, cranking out every pizza combination imaginable and bringing amazing energy to the class all night long.”

Pizza School Graduating Class May 16, 2026 - Pizza Professor Shah’s Report: “Tim (Forest Hills) came in determined to accomplish his mission of learning how to make awesome pizzas, while Chrystina and Jon (NYC) pulled up ready to eat an endless amount of pizza. Laura and Keith (Georgia), who already love grilling and smoking meats, wanted to take their pizza game to the next level and really learn how to use their Ooni to its full potential. Kelly and Brian (Pennsylvania) joined us to master the art of pizza making, with Brian’s birthday gift being our class and his holiday gift lined up as a pizza tour tomorrow. Suhani, Sonam, Shreena, Mote, Sneha, Megha, Mika, and Sheetal (Georgia, Connecticut, NYC, and Texas) came together for their annual sisters gathering, bringing nonstop great vibes and jokes all day long. Every single person made rockstar pizzas, and this entire group made the class an absolute blast from start to finish.”

Pizza School Graduating Class May 9, 2026 - “Starting off the day with pizza the only right way. Tom (Manchester, UK) pulled up for a chill day of pizza making, eating, and relaxing. George (Boston) is taking over a pizzeria and wanted to learn all the right skills to set himself up for success. He’s gonna do great. Mark (Wisconsin) slipped away for some good old pizza-making fun and was cranking out awesome pizzas all day. Ted and Bojana (Queens) were gifted the class and brought great vibes along with great pizza. Holly and Stephanie (UK) are in town completing their pizza-making mission, while Mike and Regina (Texas) finally got to learn how to make great pizzas themselves. They did fantastic, and their pizza-making friend might get jealous of their newfound skills. Diane, Martha, Sarah, Susan, and Debbie (Nashville) are in town for a fun girls trip, and since Diane had taken the class before, she knew she had to bring her friends along for the fun. They asked awesome questions and are ready to make amazing pizzas for their friends and family back home.”

For over 16 years, we’ve schooled our students, from home cooks to pros, that to make great pizza, every ingredient counts, and flour matters just as much as the sauce, cheese, and toppings.
We encourage our students, who come from all over the world, to seek out the best ingredients available to them.
Worth reading: reporting for on New York’s potential bromated flour ban, including input from Pizza School NYC founder Mark Bello.
Pizza makers, bakers, and fellow dough obsessives:
What flours are you working with lately?

Pizza School Graduating Class May 2, 2026 - Pizza Professor Shah’s Report: “Let’s kick off May the right way with some seriously good pizza. Emma, Paul, and Kathleen (NYC and Ireland) came in ready to make the real-deal New York City pie; while their styles back home differ, they were craving that classic slice and absolutely delivered, turning out incredible pies. Kevin (Dominican Republic) and Rita (Australia) were just as eager to learn. Kevin, currently a sous chef, is looking to open his own spot back home, and with his kitchen skills plus the knowledge he learned today, he’s well on his way to doing it right. Rita also stepped up and cheffed out some awesome pizzas of her own.”

Pizza School Graduating Class April 25, 2026 - Pizza Professor Shah’s Report: “Evening pizza party. Rae’Bel (California) and Brian (Brooklyn) pulled up for some pizza-making fun, and between great conversations and even better pizza, this duo was super lovely. Charlie, Betty, Cheryl, Valeria, Mark, and Ron (Long Island and NYC) came through for a friends’ night out—they go way back to college and are still going strong, which made it even better. They were the life of the party, genuinely hilarious, and brought great energy all around. They’re already excited to recreate our pizzas at home. Super sweet crew.”

Pizza School Graduating Class April 25, 2026 - Pizza Professor Shah’s Report: “Gilma pulled up with Osvaldo (New Jersey) to celebrate his birthday, and they were LOCKED IN dialing their pizza game. They’re already hyped to make pies for the family tomorrow. Ricardo (Costa Rica) is working on a pizza project back home and wanted to bring some NYC flavors with him—he absolutely crushed it. Everyone back home is about to eat GOOD. Brett and Jan (Vermont) are in NYC for the week and decided to switch it up from the usual touristy stuff. True pizza lovers—they even pregamed with pizza before class. We had some great convos all around. Michaela and Phil (Scotland) had their first NYC pizza experience with us. Nothing like it back home, and now they’re leaving with the skills to make some seriously stellar pizzas.”
