Pizza School graduating class February 1, 2025 - Pizza Professor Shah’s report: “A brisk Sunday perfect for gathering around the ovens for pizza class! John traveled from Albany NY to refine his skills, making incredible classics and a standout pesto, strawberry, and balsamic pie. Maia from Williamsburg (BK not VA) and Marius from Romania, total beginners, crushed it with a killer blueberry dessert pizza. Rohan from Australia and Adam from Canada (both living in Hong Kong) went all out with the ultimate meat lover’s dream. Robert from Long Island brought his family to celebrate Susie’s (a Dallas native) birthday before her big shift saving lives. Jake, newly engaged to Rachel, joined with Quinn and Judy. We surprised Susie with a special strawberry Nutella pizza under disco lights. Nick from Ellenville NY (close to where I grew up and the forthcoming ) is a farm owner with a bakery and farm stand . Nick nailed the classics and left with our Pizza Supreme Kit excited to see what he creates! A great group, full stomachs, and plenty of leftovers.”

Pizza School graduating class January 31, 2025 - Pizza School Professor Shah’s report: “A glorious gathering of pizza people in the house. Michael, a native New Yorker (UWS) came to step up his pizza game. His struggles with dough dissipated as evidenced by the gorgeous pies he made with us. Johanna and Adrian from Queens meant business as they competently created classic pie after pie. They even took one of our pizza-making kits home (are we invited to the next pizza party?) Kelsey and Will are visiting NYC for the weekend from DC and impressed us with their newfound pizza skills. Johann from Germany and Katie from NY were passionate about pizzas. They went straight into the off menu pizzas and they did not disappoint. Another Katie from NY accompanied by James, shined with great combos, especially their arrabbiata. And our big group from all over: Kat, Emmet and Mel from NY, Brendan and Connor from Ireland and Sarah from Boston — a group of friends from different places with a shared passion for NYC pizza. Brendan has an Ooni and we walked him through the steps to ensure he can make great pizzas when he gets back home across the pond. And lastly we have our Ryan and Jessica visiting NYC from Syracuse NY. Ryan originally thought they were just making a stop at The Pickle Guys, but Jessica surprised him with a pizza class for his birthday. Interesting story: they met working together 24 years ago at Pizza Hut and have been together ever since… one of the most beautiful love stories I’ve ever heard! All together such a sweet group intent on getting us a bunch of Instagram clicks as we approach 10K followers. Everybody left stuffed and took home leftovers — hope they didn’t make dinner reservations…“

Pizza School graduating class January 26, 2025 - Pizza School Professor Shah’s report: “Another fun/festive gathering of pizza lovers today for beautiful Sunday afternoon class. Big group from Tampa, Florida including Tiffany, Angie, Melissa, Sara, Farrah, and two named Trish. These ladies came for a weekend trip to NYC on Friday and are leaving town with their pizza leftovers packed to-go for their flight home to Florida. Farrah is a pizza school alumni and repeated the class. They were even spreading the word and telling their family to follow us on the Gram. Marcus and Hevany, originally from Brazil, have been living in Staten Island for almost 40 years. Such big personalities that made everyone in the class laugh. Marcus really wanted to learn some skills and now wants his son to take the class. They asked a lot of questions and made some bomb dot com pizzas. Tracey and Ginny, sisters, are from Curaçao, the Caribbean. Ginny is looking to open her own spot of doing a pan style pizza. I gave her some advice (like are you sure you wanna open a restaurant?! :) and gave her some tips about running a spot with prospects of franchising. We talked about rolling pins (as in not for pizza) and roti (yes rolling pins) and her pizzas were on point. They made a couple classic thin crusts and some thicker smaller pizzas to get a pan pizza vibe. We imparted a lot of pizza wisdom to them and they know they can buzz the Dough Emergency Hotline for additional guidance... Brittany from NJ surprised her boyfriend Josh (NY) for his birthday and what a surprise it was. They were so excited and made pizzas with beautiful combinations of toppings. Ricky whipped up his good ol blueberry pie Ricky Special with a birthday candle of course. A bonus treat everybody enjoyed. In Da Club was playing and happy birthday was sung. Great moment for these two.

Pizza School graduating class of January 18, 2025 Pizza School Professor Ricky’s report: “What a cold NYC day! But nothing a preheated oven and 36 pizzas baked-to-perfection can’t fix. Today’s public class and first class of the day brought a down-to-earth group of strangers together to break bread—or better said: cut pizza together. Carly and Frank from Long Island won their admission to PSNYC through a raffle at his job. Without knowing what to expect, they melted into their chairs and enjoyed the experience. Jennifer was here about a year-and-a-half ago with her company and was beyond delighted to come back—this time with her mom, Vicky. Kristi from NJ and Dayo from London came with the common goal of nailing the perfect NYC-style pizza. Sue, Joan, Tony and Lauren came as a group to enjoy what Lauren already experienced 5 years ago, weeks before the pandemic—it’s never s bad idea for a refresher and bring friends with, right? Last but not least, Olamide from Nigeria, brought her friend Simbi as a surprise for her birthday! I busted out a birthday dessert pizza and surprised her with candle-lit birthday extravaganza. Thank you class of 01/25/25 for coming and spending your afternoon with us. May there be more repeaters in the future. PS: I was in both the classes Lauren and Jenn took. I got to enjoy my photobombing photos they showed me. 🫶🏾“

Pizza School graduating class of January 19, 2025 Pizza School Professor Shah’s report: “Larry and Paula from Long Island and Brooklyn brought their beautiful family Nick, Sal and Sarah. They have an outdoor pizza oven at home and wanted to learn how to cook pizzas better and stretch them out easily! They were excited about how many pizzas they were going to make. The family made some beautiful pizzas. Greg and Deb are from Goshen, NY not so far from where I grew up. They were very lovely and enjoyed making the classics. Tania and Tyre from Brooklyn came to celebrate Tyre’s birthday. It was a surprise gift and he was definitely delighted. We played in da club and Ricky made him a strawberry Nutella pie to celebrate. Shashank (close to my name, his wife’s last name is my first name) and Sheri from St Louis came to the class with their friends. Ryan and Kelly brought their kids, Colin and Maurrin from Cincinnati. They have an outdoor oven at home as well. They were filled up by the end of class. This group of 6 were making pizzas with passion! Sheri was absolute all star, slinging pizzas in the oven, cutting basil with precision, and slicing pies with class. When I was that young I couldn’t do that at all. The young generation is taking over. Jay and Monica from Virginia and Minnesota were cracking up the entire class. (My jokes are hitting) Jay was recommended the class by a friend who came for a corporate event. They’re in the medical field and I chatted with Jay about it for a bit. Fun class!”

Having a blast in pizza class! The pies were flying high Sunday 10/13 with new pizza pals from the LES, Westchester, Seattle, Saudi Arabia and the UK! Happy anniversary to Jenny and John and big birthday wishes to TJ!

Last Saturday’s 10/5/24 fantastic class brought together people from all over The United States and a few visitors from down-under, Australia and across-the-pond, Ireland. Two anniversaries, three birthdays, and many got their tickets gifted—a class full of celebrations, indeed.
The theme of the class was: struggling to make their own dough and failing at sticking-the-landing in their ovens. It was a pleasure to guide this enthusiastic group into educating themselves about systems that will help reverse their issues. A few swirls of sauces, shredded mozzarella, and some grated pecorino Romano later, these guys were busting out restaurant-quality NYC classic pizzas.

Once again, congratulations to Nikki and Steve—Ronda and Ryan, on your anniversaries. Happy Birthday to Susanne, Marc, and Bruce—I hope on your birthday wishes come true, just like your pizza-sufficiency wishes did. Thank you all for choosing us to celebrate your festivities.

“I’ve had pizza every Friday since I was a kid. It’s tradition my parents started and I’ve carried on. Tonight I made my kids (6 and 4) their own pizzas and one for myself that I cut into a New York slice. All of them came out great and tasted good enough to rival my favorite local spots. My 6 year old ate his whole pie and went out of his way to tell me how impressed he was. I gave you all the credit. Thanks again!”
