Lemon Pound Cake Recipe

Yield: 1 standard 9×5-inch loaf (10–12 slices)

Prep Time: 20 minutes

Bake Time: 60–70 minutes

Ingredients

Cake Batter

2½ cups (315 g) all-purpose flour

2 tsp baking powder

½ tsp salt

1 cup (227 g) unsalted butter, softened

2 cups (400 g) granulated sugar

4 large eggs, room temperature

1 tsp vanilla extract

2 tbsp fresh lemon zest

¼ cup (60 ml) fresh lemon juice

½ cup (120 ml) whole milk

½ cup (120 g) sour cream or Greek yogurt

Lemon Syrup (Optional but Recommended)

¼ cup (60 ml) fresh lemon juice

¼ cup (50 g) granulated sugar

Lemon Glaze

2 cups (240 g) icing sugar

3–4 tbsp fresh lemon juice

1 tsp lemon zest

1 tsp vanilla extract (optional)

Milk tart - malva pudding
🥸Father's day treat 21 June
Serves 12

For the custard:
500g SPAR Vanilla Custard
20 white marshmallows
½ tsp ground cinnamon

For the malva pudding:
1 cup sugar
2 eggs
3 tsp apricot jam
8 tbsp milk
4 tsp butter, melted
1 tsp white vinegar
1 cup self-raising flour
1 tsp bicarbonate of soda

For the syrup:
150g sugar
8 tbsp water, hot
150ml cream

Serving suggestion:
Ground cinnamon, to dust

METHOD

For the custard:

Pour the SPAR Vanilla Flavoured Custard into a large, microwavable bowl.

Add in the marshmallows and mix the custard and marshmallows together.

Microwave the mixture on high for 3 minutes and 45 seconds stopping to whisk every 45 seconds. *Chef’s Tip: Our microwave was 1300 Watts. Microwave 30-60 seconds longer if your microwave has a smaller wattage.

Once the marshmallows have melted and the mixture has thickened, add the cinnamon and whisk to combine. Allow the custard to cool on the counter, stirring it every few minutes to ensure that it does not firm up too much.


For the malva pudding:

Preheat the oven to 180°C and grease a 25x20cm baking dish with grease spray.

In a medium-large bowl, beat the eggs and sugar well until pale, fluffy and doubled in size, about 5 minutes.

Add the apricot jam, milk, butter and vinegar and stir lightly until just combined.

Sift in the flour and bicarbonate of soda and mix until combined.

Gently pour the batter into the greased baking dish and bake the pudding for 30 minutes, until golden brown.


For the syrup:

While the pudding is baking, heat the cream, sugar and water in a small saucepan and bring to the boil. Ensure that all of the sugar is dissolved and the mixture is slightly thickened.

Immediately after removing the pudding from the oven, poke holes in it with a skewer and pour the syrup over the pudding.

Once the pudding has come to room temperature, put it in the fridge and allow to cool, about 20 minutes.

Once the malva pudding is cool to the touch, pour the thickened custard over the pudding. Smooth the custard out in an even layer.

Dust a light layer of ground cinnamon over the custard and put the pudding back in the fridge for about 1 hour or until the custard layer is set.

Once cooled, remove the milk tart malva pudding from the fridge and cut into squares. Serve on a plate and ENJOY

Chicken Cobbler
Ingredients:
For the Filling:

3 cups cooked chicken, shredded
1/2 cup unsalted butter
1 small onion, finely diced
2 cloves garlic, minced
2 cups mixed vegetables (peas, carrots, corn)
1/4 cup all-purpose flour
2 cups chicken broth
1 cup milk
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
For the Topping:

2 cups biscuit mix (like Bisquick)
1 1/2 cups milk
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
Instructions:
Preheat the Oven:
Preheat the oven to 400°F (200°C). Grease a 9x13-inch baking dish.

Prepare the Filling:
In a large skillet, melt the butter over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute. Add the mixed vegetables and cook until heated through.

Make the Sauce:
Sprinkle the flour over the vegetables and stir to coat. Gradually add the chicken broth and milk, stirring constantly until the sauce thickens. Season with salt, pepper, and thyme. Add the shredded chicken and stir well. Pour the mixture into the prepared baking dish.

Prepare the Topping:
In a medium bowl, mix the biscuit mix, milk, garlic powder, and black pepper until just combined. Do not overmix.

Assemble and Bake:
Pour the biscuit mixture evenly over the chicken filling, spreading it gently. Do not stir.

Bake:
Bake for 30-35 minutes, or until the biscuit topping is golden brown and cooked through.

Serve:
Let the chicken cobbler cool for a few minutes before serving. Enjoy this comforting dish warm!

Best Peanut Butter Brownies (Buckeye Brownies)
Ingredients:

For the Brownie Base:
1 box fudge brownie mix (plus eggs, oil, and water as package directs)
(or use your favorite homemade recipe)

For the Peanut Butter Layer:
¾ cup creamy peanut butter
½ cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
2–3 tablespoons milk (as needed for smoothness)

For the Chocolate Ganache:
1 cup semi-sweet chocolate chips
½ cup heavy cream

Directions:

Bake brownies: Prepare brownie mix as directed on box and bake in a greased 9x13-inch pan. Let cool completely.

Make peanut butter layer: In a large bowl, beat peanut butter, softened butter, powdered sugar, vanilla, and milk until smooth and spreadable. Spread evenly over cooled brownies. Chill while making ganache.

Make ganache: Heat cream in a saucepan or microwave just until simmering. Pour over chocolate chips in a bowl. Let sit 2–3 minutes, then stir until smooth and glossy.
Top brownies: Pour ganache over peanut butter layer and spread evenly. Chill for at least 1 hour before slicing into squares.
