A delicious meat-filled pastry recipe (Kıymalı Kuru Poğaça) - Serves 4-6.
This is a classic Turkish "dry" (no yeast, baking powder-based) savory pastry filled with spiced ground meat. It's perfect for breakfast, tea time, or as a snack.
Dough Ingredients:
3 cups all-purpose flour (approximately 360-390g)
125g margarine (or butter), softened at room temperature
½ Turkish coffee cup milk (approximately 35-40ml or about 3 tablespoons)
1 teaspoon baking powder
½ teaspoon salt
Filling Ingredients:150g ground beef (minced meat)
1 medium onion, finely chopped
25g margarine (or butter)
Salt and black pepper, to taste
For the Topping:1 egg yolk
2 tablespoons sesame seeds
Instructions:
Soften the margarine at room temperature. Sift the flour into a large mixing bowl and make a well in the center. Add the softened margarine, baking powder, salt, and milk. Knead until you get a smooth, soft dough.
Peel and finely chop the onion. Melt 25g margarine in a pan over medium heat. Sauté the onion until it turns pink and soft. Add the ground beef and continue cooking, breaking it up with a spoon, until browned. Season with salt and black pepper. Stir well, then remove from heat and let the filling cool to room temperature.
Take walnut-sized pieces from the dough. Roll each piece into a small circle with your hands (or on a lightly floured surface). Place about 1 teaspoon of the cooled filling in the center.
Roll out another walnut-sized piece of dough into a similar circle and place it on top of the filling. Gently press the edges with your fingers to seal them together, forming a round pastry.
Repeat until all the dough and filling are used. Arrange the pastries on a greased (or parchment-lined) baking tray.
Beat the egg yolk and brush it over the tops of the pastries. Sprinkle sesame seeds on each one.
Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until golden brown.
