Instructions :
1. Mix graham cracker crumbs with melted butter. Press firmly into a pan to form the base. Chill for 20–30 minutes.
2. Beat cream cheese until smooth. Add powdered sugar and vanilla extract. Mix until creamy.
3. Add 1 cup mango purée and mix until fully combined.
4. In a separate bowl, whip cold heavy cream to soft peaks.
5. Gently fold the whipped cream into the mango cream cheese mixture until light and smooth.
6. Pour the filling over the chilled crust and smooth the top. Chill for 1–2 hours until slightly set

7. Top Mango Layer:

1 cup confectioner's sugar
2 tablespoons milk (a higher percentage of fat works the best)
1 teaspoon vanilla extract

Directions:

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the all-purpose flour, white whole wheat flour, brown sugar, baking powder, cinnamon, nutmeg, allspice, and salt.

Add the cold, cut butter to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the milk, egg, and vanilla extract.

2 tbsp Durban curry powder
1 tsp turmeric

1 tsp coriander
2 tomatoes, grated (or 1 can chopped tomatoes)
2–3 potatoes, peeled & halved
1–2 cups water or stock
Salt & pepper to taste
Fresh coriander (optional)

Method:

Heat oil in a pot and fry onions until soft and golden.
Add garlic and ginger, cook for 1 minute.
Add curry powder, turmeric, cumin, and coriander — fry spices for ±1 minute to release flavour.
Add lamb pieces and brown well.
Stir in tomatoes and cook for 5 minutes.
Add water/stock, bring to a simmer.
Cover and cook on low heat for 1.5–2 hours until meat is tender.

❄️ Place the burrata in the freezer for 30 minutes — it must be ice-cold and firm.

🍓 Simmer strawberries, sugar, lemon juice, chili flakes, fresh chili, and balsamic for 12 minutes until jammy.
