Basically: watermelon met a creamsicle, got a glow-up, and became the star of summer. ๐Ÿ˜๐Ÿ‰โœจ

These creamy watermelon pops are the cutest summer treat: fresh watermelon blended with vanilla coconut yogurt, poured back into a watermelon โ€œpie,โ€ sprinkled with chocolate chip โ€œseeds,โ€ frozen, and sliced into the most refreshing little wedges.

Who needs a tropical vacation when youโ€™ve got this Pink Dragon Dream Smoothie in hand?! ๐Ÿ’•๐ŸŒด

This creamy, fruity refresher tastes just as magical as it looks, and it only takes 5 ingredients to make it happen:

โœจ Whatโ€™s inside:
โ–ซ๏ธ 1 frozen dragon fruit packet (or ยฝ cup frozen pitaya chunks)
โ–ซ๏ธ 1 frozen banana
โ–ซ๏ธ 1 cup plant-based milk
โ–ซ๏ธ ยฝ tsp vanilla extract
โ–ซ๏ธ Optional: 1 tsp agave or maple syrup if you like it sweeter

๐Ÿ’ก Want to level it up?
Add a scoop of vanilla vegan protein, a pinch of cardamom for lassi vibes, or swirl in some coconut yogurt on top for โœจaestheticโœจ goals.

Just blend everything until smooth and enjoy your tropical escape in a glass.

I went on a mission to find Oshiโ€™s plant-based salmon at Orchard Grocer here in New York City (one of my favorite fully vegan grocery stores!)โ€ฆ but they were totally SOLD OUT. ๐Ÿ˜ญ

Luckily, I spotted Oshi at the Plant-Based World Expo and finally got my hands on itโ€”so of course I had to make a cozy Maple Miso Oshi Bowl the moment I got home. ๐Ÿฑโœจ

๐Ÿ‘€ If youโ€™ve never heard of Oshi:
Theyโ€™re creating realistic โ€œsalmonโ€ using soy protein + omega-3s from algae (the same omegas fish get from eating algae in the first place). SO smart. It looks and flakes like salmonโ€”but no fish, no mercury, no microplastics, and totally vegan. If youโ€™re plant-based (or just trying it), this is SUCH a fun alternative.

๐Ÿฑ MAPLE MISO OSHI BOWL (Veginner recipe๐Ÿ‘‡)

โžค Glaze:
1.5 tbsp miso
1 tbsp maple syrup
1โ€“2 tsp coconut aminos
ยฝ tsp rice vinegar

โžค Cook Oshi the official way:
โ€ข Start in a cold pan
โ€ข Medium heat, covered, 3 mins
โ€ข Flip + cook 1.5 mins
โ€ข Add a little oil + sear
โ€ข Brush glaze + caramelize

โžค Plate with:
quinoa or rice โ€ข steamed veggies โ€ข lemon squeeze ๐Ÿ’›

Veginners, if youโ€™ve ever opened the fridge hungry and thought, โ€œUgh, thereโ€™s nothing to eat,โ€ meal prepping is your new best friend. It saves time, money, and decision fatigue. Plus, it helps you actually eat all those gorgeous veggies you bought.

Here are my 3 favorite veginner-friendly hacks to make it feel easy:
๐Ÿฅฆ Pick 2 proteins for the week (think marinated tofu or a batch of lentils).
๐ŸŒพ Cook one grain in bulk (quinoa, brown rice, or couscous).
๐ŸŒˆ Chop a rainbow of veggies ahead of time so meals come together in minutes.
