Kashk Bademjan:
—Eggplant, Kashk, Garlic & Onion, walnut, Spices—

Kashk Bademjan —کشک بادمجان— is a Persian, Azerbaijani and Turkish dish that literally translates as kashk and eggplant. It can be considered either an appetizer or a main dish. There are various recipes for this dish, involving caramelized onions, roasted nuts, herbs and spices.

Smoked Mirza:
—Eggplant, Tomato, Egg, Garlic, Spices—

Distinct to the Northern Persia and Caspian Sea region and specially Gilan province, “Smoked Mirza” –میرزا قاسمی— is widely known as Persian Eggplant Dip in the Western countries. The dish consists of aubergines seasoned with garlic, tomato, turmeric, oil or butter, salt and pepper bound together with eggs.

Adas Polo:
— Rice, Saffron, Raisin, Lentil, Onion —

In Persia, Adas means lentil, and Polo is rice. Adas Polo is a beautiful and delicious Persian dish. There are different recipes for Adas Polo, and the one we do at Soffreh is served with raisins and onion. Lentil has high levels of slowly digested starch and is one of the healthiest legumes for people with high blood sugar levels. Lentils are very high in protein and dietary fibre. The sprouted lentils symbolise rejuvenation and the coming of the spring and are placed on the “Haft-seen” table in “Nowruz,” the Persian New Year!
