She started her highly successful cooking school, The Culinary Cottage, after receiving many requests for private cooking lessons. Nicole completed her Culinary Certification through a CIA-designed course, has worked as a personal chef, created desserts for The Dodging Duck restaurant and brewery in Boerne, Texas (her "diner-style" chocolate pie won 3rd place in the 2011 Texas Chocolate Festival), and spent 7 years teaching cooking classes at The Culinary Cottage.

Hello! It's been a minute! If you haven't heard, I'm taking an extended (much needed) sabbatical for a few months.
Travel? Yes.
Growth and development? 100%. Possible move? 🤷‍♀️
Still cooking? You know it!
In the interim I'll be hosting some wonderful private events, volunteering where my heart is called, developing new recipes (hint: biscotti is making a comeback later this year, better than ever!) and digging deep in my garden (look at those 🍇! )
Please stay tuned to see what exciting things I have in store when I return, and to keep up with all the goings on (locals- there will be invites to join me on some fun and educational outings!)

Golden, fluffy, and delicately sweet, Tsoureki is a beautiful tradition baked with love. Infused with warm notes of orange, mahlepi, and a hint of spice, this braided bread is as meaningful as it is delicious—perfect for sharing around the Easter table. It wouldn't be Easter for me without this bread!
(Ground fennel is a good sub for the mahlepi)

Nearly nine months after the devastating July 4th floods in Kerrville, the need in our Hill Country community is still very real. That’s why I continue volunteering with Mercy Chefs in the Kerrville area.
Mercy Chefs serves chef-prepared, restaurant-quality meals to families, first responders, and volunteers who are still working hard to rebuild and recover. What amazes me most is the heart behind it all—talented chefs and volunteers from all over coming together to cook, serve, and love on a community that still needs support.
If you’ve ever thought about helping, this is such a meaningful way to do it. Mercy Chefs is always looking for volunteers, and I promise you… it’s an experience that will fill your heart as much as the meals fill plates.

Cooking is supposed to be fun… right? In my world, it absolutely is! 🎉
We had some fantastic classes this week with our Thai with a Texas Twist theme, and the menu was seriously delicious. Bold flavors, a little creativity, and lots of great energy in the kitchen made it a blast.
