Recipe:
1 pack Lifeway Farmer’s cheese
3 egg yolks
1-2 tbsp flour (you can use gluten free if you want!)
-add this in if your pancake batter is too thin
1 tsp honey or other sweet alternatives (monk fruit is a great choice!)
Pinch of salt
Raisins or your favorite fresh fruit
Combine all ingredients together in a large bowl until they make a homogenous mixture. Bake at 350 degrees F / 174 degrees C until golden brown or pan fry on the stove in a little bit of olive oil. These pancakes preserve the freshness of the fruit very well, and as a bonus, they can be frozen and reheated before packing your children’s lunch for the day.
