Before you compost your green tomatoes ...

Every autumn, folks panic over vines full of rock-hard green tomatoes. I used to do the same, lining them up on windowsills and hoping for the best. (Which is pointless, by the way—it’s temperature that ripens them, not light). But honestly? The biggest mistake isn't failing to turn them red. It's missing out on what they can do while they're still green. Sure, you can fry them. But there’s a biological trick to knowing exactly when a green tomato has sealed itself off from the plant and is ready to pick. And once you have your haul? Wait until you see what happens when you pair them with raspberries. Or what they do to a Sunday brunch. Stop stressing over the frost. Your green tomatoes aren't a lost cause—they just need a different approach. I've put the details in the comments.
