Culinary is Culture

An 1881 book titled “What Mrs. Fisher Knows about Old Southern Cooking” – one of the first African American cookbooks published in America – features a recipe for the sought-after dessert. Fisher was an award-winning cook who specialized in pickles, jellies and preserves. She was born enslaved and couldn't read or write, so her recipes were carefully described to writers who compiled them in the cookbook. It is the oldest known cookbook written by a formerly enslaved person.

Sweet potato pie is recipe #53 in a book of 160: “Two pounds of potatoes will make two pies. Boil the potatoes soft; peel and mash fine through a cullender while hot; one tablespoonful of butter to be mashed with the potato. Take five eggs and beat the yelks and white separate and add one gill of milk; sweeten to taste; squeeze the juice of one orange, and grate one-half of the peel into the liquid. One half teaspoonful of salt in the potatoes. Have only one crust and that at the bottom of the plate. Bake quickly.”
