Smoked a butt. 8lbs 7.5ish hours at 220ish most of the time. 3hrs on direct, the rest wrapped in foil. Trimmed it up (fat, but not all) and rubbed thick with Webber’s Kansas City rub, then in the fridge overnight.

Tuscan Soup!

1lb mild Italian sausage
6 slices bacon
1 chopped onion
2 tbsp chopped garlic
4-6 potatoes sliced thin
2 cups chopped spinach
1 cup heavy cream
6-7 cups chicken broth
1 tsp red pepper flakes

Brown sausage, drain and set aside. Brown bacon, set aside, but don’t drain. Cook onion and garlic in bacon grease till slightly translucent. Add back bacon, sausage, & red pepper flakes. Get it sizzlin’ then add chicken broth and potatoes. Cook till potatoes are just done. Stir in heavy cream & spinach just before serving.

Hasselback Chicken-
Slit boneless skinless chicken down almost but not all the way through. Put on baking sheet. Salt & pepper.

Preheat oven to 400. Grate or procure 1/2 cup shredded sharp cheddar. sauté 1/2 a chopped onion & 2 pressed down full cups fresh spinach in light olive oil till slightly wilted.

Stuff the spinach/onion into the slits. It’s ok if it sticks out. Sprinkle with cheddar.

Bake @ 400 for 20-25ish minutes.
