Food and Nutrition 2 completed a Global Cuisines lab today. Dishes included Chicken Scallopini, Swedish Meatballs, Tres Leches Cupcakes, and Armenian Cheese Buns.

A little different class experience today! We had the BEST time filling the school's plant containers in the courtyard with herbs to be used by our Culinary Arts & Hospitality class.
HUGE thank you to Mr. Aaron Fender of Lowe's Home Improvement in Mocksville, NC for the donation of plants and potting soil! We would not have been able to take on this project without your support.
Please go out and support our community partner that was so very generous to us. They have a beautiful array of fall plants to choose from. Contrary to what some may think, this is actually a wonderful time to get some plants in the ground! Herbs that over-winter well are Rosemary, Oregano, Sage, Thyme, and Lavender. The Rosemary plants that were gifted to us are beautiful. We'll keep you updated with their progress!

Another CTE/STEM Business Advisory breakfast in the books! I have to admit, I got a little overzealous with the menu this time, but my kiddos were ROCKSTARS and pulled it all together!

Food and Nutrition students are learning about Kitchen Equipment...what better way to learn than a fun "Tool Hunt!" They learned where everything is at in the lab and also tested their knowledge of equipment. A win win in my book!

Culinary Arts participated in a DCAW-Chopped lab today. They were given a prepped pantry and 20 minutes to prepare their "Best Egg Dish!" I don't know about them, but I loved it! There is definitely some great talent in this class. A huge hank you to 3 CTE superstars, Diane Williams, Kerstin Steinour, and Angela Reeves for donating the beautiful farm-raised eggs! Co-STEM-Teacher Matthew Barker even joined in on the fun!

Do you know what you're really eating? Food and Nutrition 1 students were out to discover how much sugar and fat are REALLY in some of their favorite foods!

Thanks to Mr. Jesse Ledbetter and Mr. Eli Lindsey,, two great CTE teachers at Davie, my Culinary Arts & Hospitality class was able to harvest fresh Basil and make some pretty tasty Pesto today! We enjoyed our work on lightly-toasted garlic bread. YUM...and no vampires with all of that garlic!

Great ProStart training today! Chef Eric Brownlee of the the Cardinal Hotel in Winston-Salem dazzled us with a dish of Ras el Hanout Squab Pigeon, Hand-rolled Couscous with Merquez Sausage, Almond, Fig and Harissa Vegetables! He was so humble and provided the educators with wonderful take-aways for students. Please support this awesome chef with your patronage! Thanks as well to McCormick for the spice love!

Ketchie Creek Bakery and Cafe is looking to fill a few positions in their Mocksville location with some hard-working high schoolers for after-school and Saturday hours. This would be an excellent team to join!

Day #2 of Yeast Breads did not disappoint...I am so proud of these Food and Nutrition 1 students! Many are very new to the kitchen, and to bake yeast breads is no small accomplishment.

Focaccia Bread (with art!), Blueberry Muffins, Cheddar Bay Biscuits, and Cranberry-Orange Scones (failed to get a pic of those....) made one busy dish pit!

I always LOVE this lab! I demo making biscuits, students write the recipe as I go, and then they create their own. So much fun and they did a fabulous job!

We had a great time today in our Baking Fundamentals lab! I do believe some of these students are going to be called into biscuit-baking-service at home! : ) They also made Chocolate Chip and Blueberry muffins to compare the two mixing methods for muffins (Muffin and Creaming).

Some of the Heroes of Hope students here at Davie High School were in the lab yesterday baking up tasty treats for the House of Hope Piedmont 2nd Annual Holiday Hope Open House.
Be sure to stop in tomorrow night and support this awesome cause! Special thanks to Bob Bailey for his tremendous work with this group!

Our only Culinary Arts & Hospitality 3 student, Marielle, baked some delicious cinnamon rolls today for her yeast project. Again, I wish you could smell them!

Cooking Methods Lab today! Students created fabulous dishes with the various cooking methods that they have been studying. They all did a wonderful job.
Quick Beef Stir-Fry, Chicken Piccata, Fish En Papillote, Roasted Vegetables and Poached Pears with homemade Sea Salt Caramel Sauce. I wish you could scratch and sniff!

This is the event that I look forward to as a CTE educator every year! After virtual everything during COVID, we were finally able to have our CTE/STEM Advisory Meeting in-person yesterday. This is such an important event for our students. Thank you to all of the industry leaders that came out! The success of our programs would not be possible without the support of our business community - and our awesome administrative support at the high school and county level.

We tried something new on November 4th and had our first ever Bake Sale for the great faculty and staff here at Davie County High School. It was such a success that we ran out of product before lunch! This trial-run featured all-things-fall baked items. We're looking at cakes (including cheesecake) in December...so stay tuned!

The Foodservice industry just gained 6 more ServSafe Managers! Congratulations to these great food-safety-rock-star students!

Finishing up the month of October with a Mother Sauces lab! Mastering this sauce is all about technique, and the students did a wonderful job! They were rewarded with a dish of classic Eggs Benedict, and the satisfaction of conquering this important culinary technique!

Culinary Arts welcomed Melissa Johnson and her Animal Science classes to our classroom on October 13th to learn about chicken fabrication. After her students fabricated chickens into their retail cuts, the Culinary Arts class made use of everything to create stock and cook the meat for upcoming projects - chicken pie perhaps? We also roasted over 10 whole birds for later culinary uses! Whew! That's a lot of chicken!

We are so glad to be back five days a week! However, it has not been without its challenges, so we thought some cookies might brighten the day of our over-worked office and administration staff.
My, how I have missed the buzz of a full lab - carefully trying to minimize the close-distance time of course! One thing this lab showed me...we desperately need new chefs' coats and hats! Please pardon our over-used and stained ones pictured here.

Day 2 of Culinary training at Johnson & Wales University did not disappoint! The Entremet shown is seven layers of delicious, tropical flavors. The duck breast was seared, smoked and "dressed" with a massaged kale salad, quick pickled onions, poached pears, beet puree, goat cheese foam, and crushed almond brittle...out of this world!!! We also got a VIP-behind-the-sceen tour that was amazing! Can I go back to school here please?!?

So appreciative to be spending 3 days in Charlotte at Johnson & Wales University for some excellent culinary professional development! Thank you Davie County Public Schools for the opportunity!

What a wonderful morning visiting Fair Share Farm yesterday! Special thanks to Emma Handel for so generously sharing her time and extensive knowledge with our Davie County High School STEM teachers. If you haven't already - you need to check out their Spring Mix as well as all the other beautiful and fresh veggies that they grow!

The evening news just issued a challenge for people to check the last photos on their phones that were taken before the pandemic. The pictures that I had on my phone were of our Food and Nutrition 2 students selling their Entrepreneurship products to the student body. Oh...how I miss those days of bustling hallways full of students! I can't wait until we all can return. : )

I was thrilled to participate today with Mr. Jesse Ledbetter, Ag Science teacher here at Davie, to present a Lunch and Learn event for our STEM students!
The focus was on the ever-popular and superb Sweet Potato. Students learned about how sweet potatoes are farmed and the nutritional punch that they pack! I shared a sweet potato casserole recipe as well as an out-of-the-box salad; either of which would make a GREAT side dish for Thanksgiving. Check out the photos below!

Sometimes the simplest recipes are the best! The Food and Nutrition I class made these delicious Honey-Glazed Baby Carrots a few weeks ago, but I was too busy teaching to grab a photo. So, when I decided to make them for a family meal the other night I took a little video just for you!
