We would like to welcome our newest member and Master Pizzaiolo, Mirko D'Agata! A native of Turin, he began working in a Neapolitan pizzeria when he was 16. Eventually, he moved to Cuneo, where he helped launch the Neapolitan pizzeria "Cinemร ".
Afterward, he worked for the master baker and world baking champion Gianfranco Fagnola, where he learned the techniques of fermentation with sourdough. He arrived in Canada in 2012 to take over the "Bottega" pizzeria. In 2014, he opened with pastry chef Sandro Carpenรฉ the Italian bakery, and pastry Arte & Farina. In 2016, he began working with the No 900 group as a cookery and pizzeria trainer.
Mikko is also the 2019 pizza world champion at the Napoli World Championship in Romana in Teglia.
