Treat yourself well every day, not just on Sunday! Today something I learned in Italy: truffle on top of a cream of Parmesan Cheese, then risotto wrapped in ham.

Must pair with is a nice Barbera, my choice is for the richness of flavors. Nothing pair as good with food as much as a Barbera.

Big hit is the “Spalla Cotta” that comes from the shoulder of the pig.
The fried dough is “Torta Fritta” and they go together like fathers and son.
The perfect pairing is with Arneis, its dryness cleans the palate and has a wonderful long finish.

At the heart of the tasting will be two extraordinary Amarone w**es:

• Bertani Amarone della Valpolicella Classico 2015 — named the #1 W**e in the World by James Suckling.

• Masi Campolongo di Torbe Amarone 2000 — one of the legendary single-vineyard expressions of Amarone, now beautifully mature after more than two decades of aging.
